Broccoli Chicken Roli

My boyfriend and I loved this recipe! I changed a few things after reading some reviews. I flash fried the onion and peppers so they would have more flavor, and I used red peppers for color. I cooked the mixture in the microwave for about 2 1/2 minutes before putting it into the rolls. Some reviews said that the rolls cooked before the mixture this solved that problem. The other thing I change was I added half the Dijon mustard because I didn't want it to over power the mixture. The sun pattern was really easy and looked great. I used 1 ½ cans of Pillsbury rolls.

Simple Sugar Cookies

This recipe turned out very nicely. I used a cookie press with these cookie and were just the right constancy. I didn't have cream of tarter sauce so I used 1 tbl of lemon juice as a substitute.

Baked Scalloped Potatoes

I uses this recipe to make a meal for 40 people at a lunch program. I added layers of ham to make it more filling. Then I added some garlic powder and a some Tex Mex spice to add a bit more flavor. I found the potatoes were runny so I mixed some flour in for the last hour; this could have been because I made such a large quantity. I used 20lbs of potatoes and it took four hours. It turned out really well and got great reviews from everyone.

Rhubarb and Strawberry Pie

I thought this pie was fantastic! A lot of the reviews said it was runny, but I thought it set perfectly it just needed to cool completely. I left out the butter because I felt it was unnecessary, the pie was perfect with out it. I added a bit of lemon juice to the recipe and didn't use a lattice top. Some reviews I read said they could taste flour, my suggestion would be to mix the sugar and flour together separately before adding it and mix really well.
