Flourless Peanut Butter Cookies

What could possibly not be fabulous about eating straight peanut butter??? My guests and I loved them! I wanted to take the advice of the white and brown sugar measurements but I forgot and made as is (adding vanilla and using crunchy PB). They baked a good 15-16 minutes!! I mushed some up in chocolate sorbet for that this-is-so-sweet-I-want-to-throw-up deliciousness. Mmmm...

Key West Chicken

Like others, I made extra sauce and baked it. I'm not a big white chicken eater, but this marinade is good. I would cut down on the soy sauce next time and really kick up the lime - the flavor didn't come through.

Zucchini and Potato Bake

This was nice - a little too mushy for me. I might try again, cutting the zucchini into smaller pieces. Also, I recommend broiling for the last five minutes of cooking.

Vegetarian Moussaka

This is very flavorful but geez is it a production to make... A dish for rare nights when I have a couple hours to get something together for dinner. The only change I made was to replace the feta for mozarella - the feta is probably better (and more authentic) but I didn't have any. I'm happy there are leftovers.

Easy Chocolate Tofu Pie

The fact that this is tofu and you can't tell earns it a five star rating. I was worried due to mixed reviews - it's really amazing! I stuck with the graham cracker crust, left out the cider and threw in some chocolate chips and sweetened coconut flakes. No whipped. It's ridiculously easy and super delicious!!

Blueberry Crisp II

Really nice! I also used frozen blueberries - defrosted, drained and sprinkled with flour to soak up more of the juice. I could have used more crumble for the top, even though when I was sprinkling it I thought it was too much... Yummers!

Healthy Turkey Loaf

First, I doubled the ingredients just to fill ONE loaf pan. After putting it in the pan, I refridgerated it for about 2-3 hours (I had other stuff in the oven) and the loaf got really juicy and soggy. When I tried to get it out of the pan to serve, the whole thing fell apart in a mushy mess. Flavor was okay... I think I'll stick to my other turkey loaf recipe.

Very good - nice and dense with the all purpose flour. Maybe it's taboo to say it - aw hell: you might as well go with a Duncan Hines mix!

Easy Spicy Roasted Potatoes

These have a really great flavor and are terribly easy. I didn't use cheese. The last few minutes of cooking time I broiled for a little crispness. A great side!

Playgroup Granola Bars

A shout out to Chef Joy for great advice: whole wheat flour, 1/2 cup sugar, 1/2 cup applesauce and canola oil for a great consistency. I'd like to add butterscotch chips for that extra kick of sweetness that I look for in a snack. Also, just a tip: measure the oil BEFORE the honey and the honey will slip right on outta the cup!

Vinegar Cookies

These are really 3.5 star - I don't see what makes them so special. They're VERY CRUNCHY yummy cookies. I was anticipating the kick of the vinegar... My mom informed me that she uses vinegar and baking soda to clean her sink pipes. Greeeaaat...

Garlicky Beet Delight

I can't get over the "dirty" flavor of beets, but this recipe is nice if you need to eat them. I used canned beets and a red cooking wine instead of vinegar - which is maybe why it didn't live up to my expectations. I'll give it another go...

Vietnamese Tofu Salad

My main problem was consistency - but I'm afraid it may be my fault for not allowing enough draining time for the tofu and for using "soft" instead of "firm" (it was all the store had). My other issue was I only had a Heinz chili sauce... My guests seemed to enjoy it so I'll try my hand at it again.

Zucchini Souffle

I really enjoyed this dish. As per other reviewers I added 1/2 tsp garlic powder, 1/2 tsp curry powder and threw some parsley into the mix. This combination of spices gave a good flavor as a great side dish. Thanks!

Seven Layer Tortilla Pie

Wow. Wow. I'm hooked. I took others' advice and baked the tortillas before layering. I added corn and a quarter of an onion I had left in the fridge. I also used chopped jar garlic because I'm lazy :). I have lots of leftovers and I'm very happy... Love it!

Coconut-Cornflake Cookies

A coconut lover's dream! I cut down the sugar to 1/2 cup, added more cornflakes because the mixture was a bit too wet and drizzled chocolate on top after baking. I also kept them in the fridge. Really, really yummy!

Bar Cookies from Cake Mix

They're addictive! I followed the advice of others and altered: 1/4 cup water, 2 eggs, yellow cake mix, 1 cup choco chips, 1 cup butterscotch chips. Also, they're great chilled. A definite regular for dessert time!

Baked Sweet Potato Sticks

The concept is great but they require more seasoning. I added garlic salt, but it could use more. The ziplock bag method is good for mixing. And definitely bake longer for a french fry crisp. Also, SERVE IMMEDIATELY - they were a soggy mess the next day.

Coconut Curry Tofu

A really great recipe to spice up dinner - literally! I didn't have chili paste, so instead I used red cayenne pepper. One tspn of the stuff knocked my socks off! I'll go for 1/2 next time... I only had two stalks of green onion and half a pound of tofu - which I froze for about an hour and then baked for 30 minutes on 150* - it stayed soft but held together. Really very easy, very healthy and wonderfully different!
