Sweet and Spicy Green Beans

A nice side dish that I'll probably make again. Directions say 'serve immediately' but they're also great cold.

Apple Enchilada Dessert

These are great for a few reasons: they're DELICIOUS; they're EASY; and they're BEAUTIFUL! They are so incredibly sweet that (depending on size) half is perfect. I also baked longer than directed for more crisp tortillas. Will definitely experiment with different fillings.

Sesame Noodles

Doesn't get better than this; it's my go-to sesame noodle recipe now. The only change I make is cutting the veggie oil altogether - with all of the other liquids, it doesn't need this greasiness. Also, I use whole wheat noodles. Make it ahead of time, keep the leftovers - you really can't go wrong!

Garbanzo Bean Chocolate Cake (Gluten Free!)

Forget gluten-free: this cake is really good! My guests ate it up and their mouths dropped when they heard the secret ingredient - they've since termed it 'hummus pie', which they think is hysterical since they're Israeli. I'm now wondering about putting in half of the batter, a layer of chocolate chips and then pouring the rest of the batter for a hot lava cake kind of thing... I'll report back. ~UPDATE~ I tried creating the hot lava - didn't work out so well. If you really want to put A LOT of chocolate in the middle and warm it just before serving, possibly. I threw in a handful and it was good to have those little pockets of chocolate, but the lava wasn't flowin'... ~NOTE~ For truly gluten-free, DO NOT flour your pan with wheat flour!!

Taco Lasagna

Really super! Nice seasoning of the beef. I baked the tortillas before assembling the lasagna to minimize sogginess. I also added corn, tortilla chips... and some other stuff. The sour cream baked in is great for creaminess. Even without cheese this was delicious!

Five Spice Muffins

Very warm flavor but I think the sunflower seeds mess up the texture and mouth-feel. I like sunflower seeds and was excited to use them, but it just didn't seem to work here. Golden raisins would be a good fit. Warm them before serving for extra coziness!

My guests said they were good... but I think they were being polite. Hard, dry and a 'blah' flavor. They're so easy to make and the color is so interesting - I just wish they tasted better.

Grilled Chicken Citrus Salad

I had leftover chicken (Key West Chicken from this site) and I wanted to put it in a salad, so I used the marinade as a dressing - it was fresh and interesting! Really great. I'll try the full recipe next time.

Flourless Peanut Butter Cookies

What could possibly not be fabulous about eating straight peanut butter??? My guests and I loved them! I wanted to take the advice of the white and brown sugar measurements but I forgot and made as is (adding vanilla and using crunchy PB). They baked a good 15-16 minutes!! I mushed some up in chocolate sorbet for that this-is-so-sweet-I-want-to-throw-up deliciousness. Mmmm...

Key West Chicken

Like others, I made extra sauce and baked it. I'm not a big white chicken eater, but this marinade is good. I would cut down on the soy sauce next time and really kick up the lime - the flavor didn't come through.

Zucchini and Potato Bake

This was nice - a little too mushy for me. I might try again, cutting the zucchini into smaller pieces. Also, I recommend broiling for the last five minutes of cooking.

Vegetarian Moussaka

This is very flavorful but geez is it a production to make... A dish for rare nights when I have a couple hours to get something together for dinner. The only change I made was to replace the feta for mozarella - the feta is probably better (and more authentic) but I didn't have any. I'm happy there are leftovers.

Easy Chocolate Tofu Pie

The fact that this is tofu and you can't tell earns it a five star rating. I was worried due to mixed reviews - it's really amazing! I stuck with the graham cracker crust, left out the cider and threw in some chocolate chips and sweetened coconut flakes. No whipped. It's ridiculously easy and super delicious!!

Blueberry Crisp II

Really nice! I also used frozen blueberries - defrosted, drained and sprinkled with flour to soak up more of the juice. I could have used more crumble for the top, even though when I was sprinkling it I thought it was too much... Yummers!

Healthy Turkey Loaf

First, I doubled the ingredients just to fill ONE loaf pan. After putting it in the pan, I refridgerated it for about 2-3 hours (I had other stuff in the oven) and the loaf got really juicy and soggy. When I tried to get it out of the pan to serve, the whole thing fell apart in a mushy mess. Flavor was okay... I think I'll stick to my other turkey loaf recipe.

These have a really great flavor and are terribly easy. I didn't use cheese. The last few minutes of cooking time I broiled for a little crispness. A great side!

Playgroup Granola Bars

A shout out to Chef Joy for great advice: whole wheat flour, 1/2 cup sugar, 1/2 cup applesauce and canola oil for a great consistency. I'd like to add butterscotch chips for that extra kick of sweetness that I look for in a snack. Also, just a tip: measure the oil BEFORE the honey and the honey will slip right on outta the cup!

Vinegar Cookies

These are really 3.5 star - I don't see what makes them so special. They're VERY CRUNCHY yummy cookies. I was anticipating the kick of the vinegar... My mom informed me that she uses vinegar and baking soda to clean her sink pipes. Greeeaaat...
