Chocolate Scotcheroos

I use a slightly different recipe with only Rice Krispies, PB, honey and chocolate but any variation is a huge hit! A helpful hint: I keep mine in the fridge after pressing into the pan and let it cool before spreading the chocolate - it just makes for easier and more even spreadibility.

Peanut Butter Vegetable Chicken Soup

This recipe separates the boys from the men. I felt such peer pressure from the reviews ("just do it" - "don't do it!"). I'M GLAD I PUT IN THE PB!!! I could smell it - and it made the borth more opaque - but it does NOT lend a nutty flavor. Just a fullness. My boyfriend was shocked. I was relieved. We both went to bed with full bellies.

Hummus III

This gets a five for passing my Israeli boyfriend's hummus standards. I usually add a little more tahini than directed. Also, instead of the chickpea water, my boyfriend instructed me to use HOT water to aid in blending. Go easy on the lemon juice. And DEFINITELY let it sit overnight as the flavors blend and the consistency thickens. La briut!

Garlic Corn on the Cob

We enjoyed this. I sprayed with Pam butter spray, used garlic powder and a little minced garlic and covered in salt and pepper. I also chose the baking method. Very tender and a great flavor! ~UPDATE~ I used Pam butter spray again but this time just used garlic powder and seasoning salt. Wrapped in foil and grilled on the barbie - super!

Kickin' Meatballs

These were really good! I tend to go for more of a kebab style seasoning, so next time I'll add more cumin, more parsley and minced onion. I also put them in the oven but after the first batch, I saw all the fat oozing out... My boyfriend insisted on revving up the Foreman Grill and finished them off there. Delicious!

Onion Rice

Loved it! I used basmati rice and it cooked like a dream. While chopping the onion, I thought it looked a bit much in proportion to the rice - it's not: throw the whole onion in! The pepper gives quite a kick! It's great because it also complements a lot of different flavors.

Actually Delicious Turkey Burgers

I loves me a big beef burger - but it's refreshing not to see all the fat streaming out of my Foreman Grill when I have ground turkey on the grill plate... These definitely hit the spot!

The sauce was a little too... creamy?... anyway, it didn't do it for me. And I sprinkled bread crumbs for some crunch; didn't help.

Chicken Tortilla Soup V

Really, really fantastic! My boyfriend wouldn't shut up about it. I had leftover chicken that had been marinated for another dish - didn't affect the flavor. I used only one can of chicken broth and 2 cups of a chicken flavored consomme powder. It has such a flavorful kick - it made me sweat while not being too spicy. So delicious!

Maybe it's because I'm sensitive to too much oregano - I thought it was overpowering here. Just okay; there are so many green bean dishes out there I don't know that I'd make this again.

Wicked Garlic Tofu Saute

Really great and filling in a light way. That said, I stuck to lite soy sauce in place of oyster sauce (kosher old me) and used a chicken consomme in place of the broth. I also used a bag of mixed frozen broccoli, carrots, water chestnut (best. crunch. ever), snap peas and I threw in shitake mushrooms. Served it over brown rice - it came together quickly and easily, my man liked it and I'm looking forward to leftovers.

Chocolate Crinkles II

These are deadly. They're not TOO sweet, so eating three or four won't give you that sickly sweet stomach ache. They're extremely light and airy, so they don't fill you up. You can literally eat these all day. The dough is very sticky - I found that coating a spoon with the powdered sugar helped with scooping.

Pesto Lasagna

This is a great lasagna. The first time I added mushrooms, the second time artichoke bottoms - I feel like it needs a little something for bulk. Also, I don't use all 30 oz of ricotta. Guests love it and I always hope for leftovers!

Apple Enchilada Dessert

These are great for a few reasons: they're DELICIOUS; they're EASY; and they're BEAUTIFUL! They are so incredibly sweet that (depending on size) half is perfect. I also baked longer than directed for more crisp tortillas. Will definitely experiment with different fillings.

Sesame Noodles

Doesn't get better than this; it's my go-to sesame noodle recipe now. The only change I make is cutting the veggie oil altogether - with all of the other liquids, it doesn't need this greasiness. Also, I use whole wheat noodles. Make it ahead of time, keep the leftovers - you really can't go wrong!

Garbanzo Bean Chocolate Cake (Gluten Free!)

Forget gluten-free: this cake is really good! My guests ate it up and their mouths dropped when they heard the secret ingredient - they've since termed it 'hummus pie', which they think is hysterical since they're Israeli. I'm now wondering about putting in half of the batter, a layer of chocolate chips and then pouring the rest of the batter for a hot lava cake kind of thing... I'll report back. ~UPDATE~ I tried creating the hot lava - didn't work out so well. If you really want to put A LOT of chocolate in the middle and warm it just before serving, possibly. I threw in a handful and it was good to have those little pockets of chocolate, but the lava wasn't flowin'... ~NOTE~ For truly gluten-free, DO NOT flour your pan with wheat flour!!

Taco Lasagna

Really super! Nice seasoning of the beef. I baked the tortillas before assembling the lasagna to minimize sogginess. I also added corn, tortilla chips... and some other stuff. The sour cream baked in is great for creaminess. Even without cheese this was delicious!

Five Spice Muffins

Very warm flavor but I think the sunflower seeds mess up the texture and mouth-feel. I like sunflower seeds and was excited to use them, but it just didn't seem to work here. Golden raisins would be a good fit. Warm them before serving for extra coziness!
