Broccoli Chicken Roli

This recipe is a keeper!!! Easy to make and everyone loved it. I followed the recipe exactly and had enough of the filling to make it twice; this made for a happy family! You could easily omit the onions if you have a picky eater. This also came out great when I substituted rice cheese for my milk allergy child.

Perfect Pumpkin Pie

I loved this! I skipped the canned pumpkin and used fresh pumpkin puree (cook the pumkins in the oven @ 350 until they are soft enough to cut through, scrape and puree in a blender) and my favorite home-made pie crust; this was exactly what I was looking for! I had a very traditional tasting pie. I've already got requests to make this again once the fresh pumpkins are in season.

Orange Pineapple Marmalade

My son loves the cherry/orange/pineapple marmalade from a specialty shop we found vacationing in Delaware.... and this was a very similar recipe; we're Rochestarians too! I substituted one can of the crushed pineapple for 1 drained can of sour cherries and prepared everything else exactly as directed. It turned out great! Next time I make this, I'll try it stove top & process in a boiling water canner for easier storage. This recipe is a keeper!

This was excellent! I did add 1 tsp of corn starch to thicken it & went a little heavy on the cinnamon due to our preference- but will be making this again soon!

Waldorf Salad II

Great recipe, easy & pretty on the table! I prefer a more traditional version & this was it. I made a huge batch to serve a crowd & left skins on to save time. I used a 50/50 combination of golden raisins & craisins just to add variety. I coated the diced apples w/ lemon juice & only put about a cap full in the dressing part. Will definitely make this one again.

Caribbean Crabmeat Salad

This was great! I had to tweak it based on ingredients on hand (substituted crushed red pepper for jalepeno & omitted mango). I cannot wait to make this with the missing ingredients! Very refreshing alternative to the heavy mayo salads.

Pumpkin Butter IV

This was one was a great recipe! I've made it a few times and typically use the same amount of sugar, but 1/2 white & 1/2 brown for a richer color. By far one of my favorites :)

Crisp Pickled Green Beans

This recipe has become one of our favorites, I use it constantly over the summer!!! The only change I've made was instead of the red pepper flakes, I drop 1 whole hot pepper into the jar w/ the garlic and dill sprig before I pack the beans. I also make extra on the vinegar solution as I tend to buy more beans than the recipe calls for... knowing we'll use them ;) I'm so glad to have found this recipe!

Chicken Chimichangas with Green Sauce

We really liked this one too! Very easy to make. I used canned chicken and rinsed it really good, and I'd cut the amount of sauce in 1/2, as it made a lot. Either that, or make extra & freeze :)

Spicy Slow Cooker Black Bean Soup

This was an excellent recipe you may want to make extra; I'm making it a 2nd time in 2 weeks! The only adjustment I made was to use sweet bell peppers instead of the jalapenos because I was serving it to daycare children. I also cooked it for an extra day in the crock pot on low heat to have a softer bean, and that was only as a matter of preference.

Scalloped Potatoes and Onions

I followed this recipe exactly and this to be a solid recipe. My very picky nephew (3 years old) helped prepare it and devoured it!!! I also have a child who cannot have milk products and substituted the butter with a safe substitute without issues. I will most definitely make this one again!

My Sister's Favorite Potato Salad...Ever

I loved this b/c it had no egg chunks and it was very dilly; my husband felt it was missing something. We added bacon bits (real), radish (shaved via mandolin), and scallions which made it that much better. I felt that it was a lot of dressing for the amount of potatoes called for, so it was not a big deal to make a few extra potatoes.

Moussaka

This was mediocre at best. We live near a restaurant that has a fantastic version & this didn't compare. I followed the recipe almost exactly- except we omitted the wine (didn't have any), and added egg whites to the bachmel sauce like others suggested. It was also incredibly labor intensive and the time the recipe suggested was off quite a bit. The 2nd star is there because my entire daycare group ate this & enjoyed it... but it's way too much work for 6 toddlers. Update: I've made this a second time & it was still a very labor intensive recipe. I took it to a pre-school dinner & most that tried it enjoyed it. I still prefer the restaurant version near us, however IF I had 2 days to make this, I would use this recipe again.... I'm adding more stars.

Pecan Turtle Bars

Its super easy to make.... so I've tried it a few times; I'm not in love with the outcome of this recipe. I up the ratio of the caramel layer by 1/3 c butter and 1/4 c brown sugar, keeping the same ratio but not wanting to go overboard with it. It's OK with regards to taste and consistency, it's just not great overall. At least it's full of sugar and my children are less critical as sugar increases.
