Simply the Easiest Beef Brisket

This was EXCELLENT! I followed the recipe exactly except that I did not have any beer so I substituted red wine and it turned out soooo delicious that everyone had seconds! Will definitely make this again over the holidays.

Creamy Rice Pudding

Excellent, especially on a cold morning! I used Minute rice, which is long grain, because that's what I had on hand. I can see where the short or medium grain rice would make a difference in the texture, but overall, the Minute rice worked very well too. I made it exactly as the recipe was written except I opted to add the sugar at the end. Some reviewers though there was too much sugar in it, so I portioned out my 1/3 cup and then added it little by little, taste testing as I went along, until I was happy with the amount of sweetness. For me, that point came at slightly less than 1/4 cup. I also sprinkled cinnamon into the pudding and that really kicked it up a notch IMO. Definitely a keeper! Thank you for sharing!

Barbecued Round Steak

Excellent flavor! I used the slow cooker for mine and the meat just melted in our mouths. It was a little too "zingy" for me so next time, I think I will use less vinegar and mustard and increase the brown sugar. Still, it was delicious and I will definitely be making this again!

Caramel Snack Mix

This wasn't that great. A little too sweet for me. In fact, sugar seemed to be the only flavor. I followed the recipe exactly, but maybe if I had used different nuts - I'm thinking peanuts like one reviewer suggested. The key to keeping it from globbing up after you take it out of the oven is to keep stirring it while it cools. I mean don't stop. Get a pancake flipper and just keep turning the snack mix over and over in the pan. After about 10 minutes, you'll notice that it has cooled to the point where it's no longer sticky. Then you can put it in a bowl, although you may have to give it a stir once or twice after you transfer it.

Puppy Chow

Excellent recipe! I took the others advice though and used a whole bag of chocolate chips and 1/4 cup of butter which really made the mixture as smooth as silk. One thing I would like to warn others about - I was out of semi-sweet chocolate chips and used milk chocolate chips instead. The recipe still came out, but it's a bit too sweet for my tastes. Everyone else loves it though. I really think you need to stick with the semi-sweet chips on this one. Other than that, it's delicious!

Kentucky Butter Cake

Absolutely wonderful! I followed the suggestion of other reviewers and mixed the wet ingredients separately from the dry and them combined them. I also added one more tablespoon of water to the sauce as I noted several reviewers said it was too thick to soak into the cake. Everything turned out perfectly! YUM!

Coconut Chews

These were awful! I don't know if I did something wrong (though the recipe couldn't have been easier), but they tasted terrible. I have a family of chocoholics and this is the first time I've ever seen them throw out anything containing chocolate! I don't know what the problem was. I didn't substitute, add or omit anything and I used all name brand ingredients. The texture was fine. It was the taste that was the problem.

Pumpkin Chocolate Chip Muffins

YUM! I doubled the spices and I'm glad I did. Even doubled, they were very subtle I thought. I also bumped the pumpkin up to one cup and used dark brown sugar instead of white per the suggestion of one reviewer. I used 1/2 cup of chocolate chips, but the next time I make them (and there will be a next time!), I will use a full cup.

Reunion Meatballs

OMG, these were sooooo good! I did what another reviewer suggested and used half ketchup and half BBQ sauce instead of all ketchup and I added 1/4 tsp. liquid smoke. Other than that, I followed the recipe. This was such a hit! Thank you!

Robbi's M&M Cookies

Great cookie! I followed the recipe except for these changes: used 2 sticks of butter instead of shortening, added 1/4 cup flour to the flour called for and used dark brown sugar. I noticed some complaints about the cookies not being sweet enough, but they were fine for us. What makes brown sugar brown is molasses (a sweetener) so I figured I'd use dark brown to add to the sweetness and they were perfect. I also chopped up the M&Ms to add to the dough and placed whole ones on top of the finished cookies when they came out of the oven. I mixed the flour, baking soda and salt in a separate bowl and added it a little at a time to the wet ingredients, mixing well in between additions. I refrigerated the unbaked dough between batches and rolled it into little balls which I flattened slightly on the baking sheet. My cookies were not flat at all. They were crispy around the edges and tender in the middle. I could taste the butter, the chocolate, a tiny bit of salt and the sugars. Wonderful!
