Simply the Easiest Beef Brisket
This was EXCELLENT! I followed the recipe exactly except that I did not have any beer so I substituted red wine and it turned out soooo delicious that everyone had seconds! Will definitely make this again over the holidays.

Creamy Rice Pudding
Excellent, especially on a cold morning! I used Minute rice, which is long grain, because that's what I had on hand. I can see where the short or medium grain rice would make a difference in the texture, but overall, the Minute rice worked very well too. I made it exactly as the recipe was written except I opted to add the sugar at the end. Some reviewers though there was too much sugar in it, so I portioned out my 1/3 cup and then added it little by little, taste testing as I went along, until I was happy with the amount of sweetness. For me, that point came at slightly less than 1/4 cup. I also sprinkled cinnamon into the pudding and that really kicked it up a notch IMO. Definitely a keeper! Thank you for sharing!

Caramel Snack Mix
This wasn't that great. A little too sweet for me. In fact, sugar seemed to be the only flavor. I followed the recipe exactly, but maybe if I had used different nuts - I'm thinking peanuts like one reviewer suggested. The key to keeping it from globbing up after you take it out of the oven is to keep stirring it while it cools. I mean don't stop. Get a pancake flipper and just keep turning the snack mix over and over in the pan. After about 10 minutes, you'll notice that it has cooled to the point where it's no longer sticky. Then you can put it in a bowl, although you may have to give it a stir once or twice after you transfer it.
