Praline Sweet Potatoes

I've made this every year for Thanksgiving for several years, and it's always a huge hit. In the past, I always followed it to the letter. This year, I forgot to buy heavy cream, but happened to have half and half on hand. I made the substitution and nobody noticed. I have decided to keep that change to save the calories and fat a little bit.

Wacky Cake VIII

I mixed all of the ingredients in a bowl, and used the batter to make cupcakes. I yielded 30 cupcakes out of the doubled recipe. I was pleased with how good it tasted. The texture was very good as well- I never would've guessed there was no eggs.

Sue's Hot Fudge Sauce

I increased the cocoa to 1/2 c. after reading the reviews. When I made this, I handled it much the way I cook fudge- I stirred it until it came to a boil, and then I completely left it alone while it boiled. Once the 7 minutes were up, I let it cool for a bit, then used my hand mixer and mixed it for about 5 minutes on high, adding the vanilla towards the end. By that time, it was nice and thick and tasted amazing!

Eggless Pasta

I used this recipe to make noodles for chicken noodle soup. Everyone raved about it, and loved it much more than my usual egg noodle recipe. I want to buy a pasta attachment and try my hand at making my own spaghetti now!

Fluffy Peanut Butter Frosting

After reading other reviews, I was careful adding the confectioner's sugar. I found that at 1.5 cups, it was way too dry. So, I didn't add any more, and added the milk as directed. It was very good. I live in a very dry climate, maybe in a more humid climate the extra 1/2 cup is necessary? I would suggest you add the confectioner's sugar a little at a time, and stop when the consistency is correct.

Pizzelles II

I used real butter instead of margarine, and 2 tsp of vanilla in place of anise. They crisped up really well, and were a very nice, light flavorful cookie. Thanks!

Arugula Persimmon Pear Salad

I made this for a group of friends tonight, and it received rave reviews. I doubled the recipe, and had to use green onions because my grocery store didn't have shallots. Otherwise, I made it exactly as written. It was a huge hit.

Grandma's Orange Rolls

I added a little orange extract, which I think was a great idea. Also, instead of the glaze, I made a traditional cream cheese icing with a couple tablespoons of orange zest. They were a huge hit.

World's Best Potato Salad

Persimmon Bread II

We really enjoyed this bread! I made a few changes- for oil, I used 1/2 c. oil and 1/2 c. applsauce. Then 2 1/2 c. brown sugar instead of sugar. I also omitted the water and put in 1 1/2 c. persimmon pulp and added 1/4 tsp of ginger. I put the ground walnuts on top, and it made for a very pretty loaf. Thanks so much!

Spaghetti Squash I
