Spicy Black Bean Chili
About this Cook
I am a 51 year old grandpa of 1 beautiful girl who is 2 1/2 years old now. I babysit her 3 days a week and we both love to cook. Me in the kitchen and her on a toy stove. She also loves to watch food network and imitate what she sees. My cooking background comes from having worked in restaurants most of my life. Now that I'm older, it is a wonderful hobby, not just a job.
My favorite things to cook
Anything in the slow cooker. I do some baking, but not that good at it. I love foods with alot of flavor, and I enjoy changing the ingredients to create totally different dishes.
My cooking triumphs
The first time someone asked me to cook for them. A good friend of mine, who I share "leftovers" with, came to me and asked if I could make a dinner for her and family.
My cooking tragedies
You name it, and I have probably screwed it up at some point. I once made an orange and cranberry quickbread, and totally forgot to add the butter to the batter. It was in the oven for about 20 minutes, when I saw the butter on the counter. Uh oh!!! Needelss to say, it was rather dense.

Corned Beef Hash
I just made this for breakfast this morning. I used leftover corned beef from St Paddy's day, and it was perfect. The only thing I changed was that I used 2 cups of beef stock, and let it simmer until all liquid was gone. I then portioned it, and put it into a lightly oiled pan to brown it. The taste was amazing, better than any restaurant hash. Excellent recipe!

Beef Florentine
I give this one 5 stars because it is so easy to make. I sauteed onion and garlic with the beef, and added italian seasoning with the other spices. Along with the cheeses, I added Ricotta to the mix. The result was great!

Cream Corn Like No Other
The first time I made this, I was astonished! I had previously only eaten creamed corn out of the can and I did not care for it much, and I always avoided it when eating out. From the first bite, I had one of those OMG! moments. It tasted so fresh and just like corn too! I have made it several times since, and it's always a hit. Be warned though, it is highly addictive!
