Soft Oatmeal Cookies

SOOOoo good will now be a permanent in my recipe book. For those having gooey problems first off press the cookies down as is stated in the recipe and second they will seem gooey when they are straight out of the oven. i used a toothpick inserted in the center of the cookie it came out clean so i knew it was done. once the cookies cool off they are not gooey they are firm on the outside and soft inside.

Corn Fritters

i did two batches of these today i used VERY fresh corn from the cob the first batch i made as is which turned out so tasty and the next batch i made i added cheddar cheese, more salt and some Cayenne pepper and WOW we really liked it alot. I could see this as being a breakfast or sweet item but i wanted to try to make it a little more savory to serve as a side dish or appetizer

Deep South Fried Chicken

i did not have a problem with sticking i used a regular pan and just added a tad bit more oil. i LOVE this recipe i have been trying to find a good one for fried chicken and not that i found one my boyfreind says its a keeper lol. i did add garlic salt and cayenne pepper and also as one other reviewer mentioned i dipped in flour then in egg yolk then back in the flour which gave the chicken a more crunchy coating in the end very good!

Candied Sweet Potatoes

I had to make sweet potatoes for a thanksgiving dinner i was in charge of. I have never made them before so i searched for two days for a good and easy recipe. I know i read alot about the butter problem. If you are like me and love the taste of butter ( i use i cant believe its not butter) i tried this recipe two times and found that if you make it the night before you want to eat it put it in the fridge and reheat the next day. You still get the great butter taste with out all the floating butter.
