Pear and Almond French Toast Casserole

Reviewed: Jun. 4, 2011
I made this last night and baked it this morning. It's delicious! I halved the recipe and made it in a glass pie dish using 6 slices of whole wheat sourdough bread and egg beaters (by the way 1 cup is equal to about 4 large eggs). I did not use almonds. I forgot to layer the brown sugar on the bottom but remembered before I placed it in the fridge so I layered it on the top. Then when it was done, I flipped it and sprinkled it with more brown sugar and placed it back in the oven for 5 minutes to get all melty. As you can see from my picture it did stick a bit because the sugar caramelized on top. If I were to get the sugar in the right order I'm sure it would be lovely to serve to guests!

Apple Snack Cake

When I pulled it out of the oven I thought that I had somehow burnt it. All of the sugar had sort of carmellized to form a very hard shell. Surprising, but not bad. I'm sorry that I didn't cut it and serve it right away. It stuck to the pan even though I had greased it. My boyfriend loved it though, especially with whipped cream.

Mango Custard Pie

Reviewed: Dec. 14, 2006
Very yummy. I didn't have and fresh mangos and only one can of canned, so I used a can of papayas as well. I pureed the two together in a food processor after I strained the juice. Personally I would have reduced the cinnamon a bit, but my boyfriend loved it. I also used a graham cracker crust since I don't really like regular pie crust. The custard texture was great.

Spring Lime Tea Cookies

Reviewed: Dec. 14, 2006
I didn't have a fresh lime on hand so I used bottled lime juice plus the zest of an orange with a little fresh orange juice. The taste is still predominantly lime but has a nice orange background, especially when you bite into the zest. I was a bit hesitant about using granulated sugar so I just made an icing of powdered sugar and lime juice. YUMMY! VERY limey. will definately make again.

Berry Shortbread Dreams

Great cookies! I used a jam made with strawberries, marionberries, and raspberries. They turned out very cute. Very rich; great with a cup of milk or coffee.
