Spiced Sweet Roasted Red Pepper Hummus

Got rave reviews from my coworkers. Use sesame oil in place of the tahini. Oh and don't be afraid of the cayenne pepper. It isn't really that hot. Excellent recipe!

Bourbon Whiskey BBQ Sauce

Traditional Gyro Meat

Very good recipe! A bit time consuming but well worth the effort. Found that your hands will smell with the spices for days after making so if you don't want stinky hands wear gloves. Another way to get rid of the smell is to wipe your hands with lemon juice! The best trick to these is to slice the meat as thin as you can and fry up with some olive oil. Also, use 1 tsp of salt like other reviews. Don't worry, the meat can handle it.

Flank Steak a la Willyboy

Got rave reviews even though I over cooked the meat. Marinated the steak for 24+ hours. Asked everyone if the meat was too sweet because of the other reviews and no one said it was. A+++ marinade. Will be entering this recipe in my Top Chef competition at the end of the month. Should be interesting to see what others have to say.... especially the food guy from the local Chicago news channel. Think this will be the ultimate test.

Tzatziki Sauce

Very good taste but as others have said, very soupy even after draining the yogurt. Should have drained the cucumbers a bit more. I would suggest cutting up your cucumbers the night before, layer on paper towel or on a wire rack, add a bit of salt and sit in the fridge.

Cabbage Fat-Burning Soup

Good basic soup. Needs help in the flavor department. Used V8 juice and chicken stock in place of the water. Added 4 cloves chopped garlic, oregano and some bay leaf. 1/2 teaspoon cyanane gives it a mild kick. Needs just a bit of salt to really bring up to a good soup. Note you need a very large pot for this recipe! I kept the veggies quite large so the cooking time had to be increased to 2 hours but I like a chunky soup.

Ronaldo's Beef Carnitas

Very good! While it was cooking it smelled like it was going to be very spicy however it was kind of mild. Would add a touch more spice for my tastes. Used a inexpensive roast and cooked in the crockpot for 8 hours. Could have been done in 6 but it wasn't time for dinner. Added 1/2 cup of water to make sure the meat didn't dry out. Very tender and moist. Think next time in addition to adding more spice I might add 1/2 cup red wine.
