Broccoli Chicken Divan

Kind of bland. Needs some spice to make it a 4 or 5 star recipe. Would add some pasta, peas and pepper. Maybe some other spices would help wake this up. Not bad but could be better.

Chicken Enchiladas I

This makes a TON of enchiladas so I would cut in half if you don't have a big crowd! They are tasty but I like my mexican food spicy. Used enchiladas sauce in place of the tomato sauce. If you use the sauce you don't have to add chili powder, water and taco sauce. If you make the full amount, you'll be able to fill at least 12-16 flour tortillas, unless you over stuff them. One is more than enough per person especially if you serve with spanish rice as a side.

Ronaldo's Beef Carnitas

Very good! While it was cooking it smelled like it was going to be very spicy however it was kind of mild. Would add a touch more spice for my tastes. Used a inexpensive roast and cooked in the crockpot for 8 hours. Could have been done in 6 but it wasn't time for dinner. Added 1/2 cup of water to make sure the meat didn't dry out. Very tender and moist. Think next time in addition to adding more spice I might add 1/2 cup red wine.

Tzatziki Sauce

Very good taste but as others have said, very soupy even after draining the yogurt. Should have drained the cucumbers a bit more. I would suggest cutting up your cucumbers the night before, layer on paper towel or on a wire rack, add a bit of salt and sit in the fridge.

Traditional Gyro Meat

Very good recipe! A bit time consuming but well worth the effort. Found that your hands will smell with the spices for days after making so if you don't want stinky hands wear gloves. Another way to get rid of the smell is to wipe your hands with lemon juice! The best trick to these is to slice the meat as thin as you can and fry up with some olive oil. Also, use 1 tsp of salt like other reviews. Don't worry, the meat can handle it.

Flank Steak a la Willyboy

Got rave reviews even though I over cooked the meat. Marinated the steak for 24+ hours. Asked everyone if the meat was too sweet because of the other reviews and no one said it was. A+++ marinade. Will be entering this recipe in my Top Chef competition at the end of the month. Should be interesting to see what others have to say.... especially the food guy from the local Chicago news channel. Think this will be the ultimate test.

World's Best Lasagna

I had high hopes for this recipe because of all the positive ratings. It's time consuming and doesn't result in a WORLDS BEST lasagna. I hate to be so critical but because of the total number of glowing reports I have to speak out. Better and easier recipe. Get a jar of prego and dress up anyway you like. Add 1 lb of ground beef for a nice meat sauce. Add 1 egg to 16 oz of ricotta, 1/2 grated parmesan and 1/4 cup sour cream. Boil 1 lb lasagna noodles for about 5 minutes (will not be soft). Add a bit of sauce to dish, layer 5 noodles, ricotta mixture, grated cheeses of your choice and sauce on top. Continue for 3 layers. Bake for 50-60 minutes at 375 degrees. Let sit for 15-20 minutes before serving. This is a better and quicker recipe than the one you were looking at. Don't waste your time people. Easier and a better tasting Lasagna is only a few clicks away.

Spiced Sweet Roasted Red Pepper Hummus

Got rave reviews from my coworkers. Use sesame oil in place of the tahini. Oh and don't be afraid of the cayenne pepper. It isn't really that hot. Excellent recipe!

Award Winning Soft Chocolate Chip Cookies

Not bad but a much different that I'm used to. Very fluffy when they come out of the oven. They don't spread so you have to tap them down before cooking. Got nervous after the first batch cooked because they were very soft....almost like they weren't cooked. Cooked the second batch a bit longer, 15 minutes, and it seemed to work better. Need to tweak this a bit more next time. Coworkers raved over the taste though.
