Chicken Pot Pie IX

Really good. I didn't use the pie crusts, I used buttermilk biscuits. Ladeled the filling into individual foil loaf pans and topped with a biscuit. The biscuit doesn't have to reach the ends so don't worry. Bake at 350 until golden. These freeze well. Wrap in plastic wrap and put in a ziplock bag. Bake at 350 from frozen for 1 hour. Might want to cover with foil for the first 30 minutes.

Connie's Zucchini "Crab" Cakes

Draining the Zucchini is a MUST! I pan fried these but they were a bit soggy even after draining the zucchini for 1 hour. Next time I plan on draining for more than 4 hours to see how that works.

Beef Stroganoff III

Really good. I recommend adding fresh mushrooms at the start, omit the white wine, add 1/3rd cup cream cheese. Double the sauce if you plan on having leftovers. Mix in the egg noodles before putting the in the fridge. Great midnight snack, lunch or dinner the next day.

Buttery Corn Bread

Great recipe but you HAVE to reverse the flour and cornmeal portions. MUCH better this way! I also only added 3/4 cup sugar and the bread was sweet enough without being over powering. Make these changes and you will not be dissapointed.

Mine didn't turn out. Waste of time and money. After the fact found out that there should be egg and only a bit of flour, not nearly what this recipe calls for. Will try again with a different recipe than this one. Suggest you do the same.

Cabbage Fat-Burning Soup

Good basic soup. Needs help in the flavor department. Used V8 juice and chicken stock in place of the water. Added 4 cloves chopped garlic, oregano and some bay leaf. 1/2 teaspoon cyanane gives it a mild kick. Needs just a bit of salt to really bring up to a good soup. Note you need a very large pot for this recipe! I kept the veggies quite large so the cooking time had to be increased to 2 hours but I like a chunky soup.
