Crazy Cake

Really easy and tasty! I've used both melted butter and melted coconut oil in place of the vegetable oil and they come out perfect. My husband can never wait for them to cool, but we still find they satisfy the sweet tooth warm. I have let them cool in the fridge and they became more dense. I scooped out some of the inside and stuffed with a peanut butter frosting. They tasted like snack cakes- a big hit!

Wheat Crackers

Don't forget to sprinkle the salt on top! Even with the addition of about 1 tsp of dried herbs and seasonings, these still don't have a lot of flavor. Halfway through I remebered to sprinkle the salt on top and it made a world of difference. I also baked the second half of the batch at 375F and I think that made them slightly crispier.

Honey Graham Crackers

Amazing, taste just like graham crackers. My husband ate the 1/2 batch I made in an hour. I didn't have milk, so I used water, and they still turned out fine! I also substituted a little of the honey (2 T) for molasses. Roll out thin to get the crispy graham cracker like texture.

Cocoa Banana Bars

I made these as birthday cupcakes and they were a hit even without icing! I ran out of sugar, so my final amount was more like 3/4 c. vs. 1 c. They were still plenty sweet.

Baked Kale Chips

Delicious! We used just regular sea salt. These come out tasting and smelling a lot like popcorn. They do burn easily, so keep a close eye on them.

Cranberry Orange Relish with Orange Flavored Liqueur

I used a very sweet orange- I think the variety was honeybell? I found it so sweet that I needed less sugar (which I also halfed with honey). No liqueur. FYI- if you use a blender like I did, don't be scared if it looks a little frothy. By the next day it was darker in color and had firmed up. Delicious!

Rum Cake II

Really yummy! I made cupcakes out of this recipe and they were a hit! I omitted the rum extract and used only the rum. I also made a vanilla icing with coconut flakes and a dash more rum.

Banana Oatmeal Crumb Cake

Delicious! It was much lighter and fluffier than traditional banana bread. My only complaint was that it was a little on the sweet side with both the sweet cake and crumb topping. Great way to use up bananas and oatmeal (things I always seem to have lying around!).

Baked Oatmeal Squares

My family raved about this, which I used both as a healthier dessert and sweet breakfast. I ended up substituting applesauce for the oil too. Also, I wanted things fluffy, so I used 1 1/3 c. of oats and 1/3 c. of flour. Thanks!

Basil Vinaigrette Dressing

I seriously had to make this for a month solid for my mom it was so tasty! When the basil is fresh at the market, this is a great treat. I sometimes substitute flax oil for olive oil which is a healthier option. Also, a dash of lemon juice does seem to brighten it up even more.
