This soup is wonderful! I doubled the portion and used my 6-quart Crock Pot to make enough for company. It was such a big hit that between only four of us, we ate so much that there is hardly enough left for leftovers! The changes I made were: I boiled 4 chicken breasts just long enough to turn them white on the outside, shredded them and placed them in the Crock Pot. I used 70 ozs (2 boxes & 1 can) of chicken broth. I added 1 can of black beans, rinsed & drained. I used only 1 1/2 TBSP lemon juice and added 1/2 lime juice. I used 1/2 medium an 1/2 mild salsa so that it would be mild enoug for everyone to enjoy. I added 1 tsp of fresh chopped cilantro. I cooked on high for 3 hours and reduced to low for about 2 hours until company arrived. I made the following available for people to add as they preferred: Mission tortilla strips, jalapenos, shredded Mexican cheese, sour cream and guacamole. It was delicious!
