Asian Tuna Patties

This was really good! My nine-year-old tuna hater even ate and liked them (of course I didn't tell him what it was until after he ate it)! I served these with rice and stir fried broccoli with an orange sauce. Great!

Chicken Breasts Pierre

This is fantastic! The only thing I did differently was to sautee the chicken breasts in olive oil and I did not bread them. I also added a bit of cornstarch to the sauce at the end because it was not really thick enough for my liking. Delicious flavor-a big hit in my house!!

Lemon Curd

Burnt Butter Frosting

I give this frosting 6 stars! WOW! This is seriously the best frosting I have ever tasted. It is very very rich so a little goes a long way. I used it to top some peanut butter cupcakes. Fab combination. Thanks so much for this recipe!!

Anna's Amazing Easy Pleasy Meatballs over Buttered Noodles

I have to say that using this recipe as a base with some changes, my family loved it! I used a two pound bag of frozen meatballs, 1 can of cream of mushroom soup (my husband hates celery), one envelope of dry onion soup mix, one can full of milk, two of beef broth and a package of sliced mushrooms. It tasted really good, but had too much grease, so I skimmed as much off the top as I could. Then added cooked noodles to the mixture after it was done. I think next time I will cook the meatballs in the oven to drain the grease and then mix together. Overall though, very good.

Sloppy Joes

This was delicious!! I put this in a casserole dish between two layers of crescent rolls and sprinkled the top w/sesame seeds. So good! Usually when I make this casserole for my family I use a packet of sloppy joe seasoning w/tomato sauce. Never again!

Key West Chicken

This recipe is great-I did change the measurements slightly though: 3T soy, 3T honey, juice of 1 lime, and 2 cloves of garlic. I marinated for 4-5 hours and grilled. It was delicious, but would be even better marinated overnight. I served it with rice and grilled asparagus that I marinated in the same recipe. Wonderful-you should try it!!

Coconut Cream Pie IV

I loved this pie (the second time around)!! You must follow the recipe EXACTLY otherwise it will not turn out. I forgot to put the filling back on the burner for the second time-big mistake! Just be sure to bring to a hard boil and follow instructions and you will have a beautiful pie!!

Mrs Espy's Enchilada Sauce

This is a great base recipe, but I made a few tweaks-first I sauteed garlic in the oil and used chicken broth in place of water, added oregano and cumin and a pinch of cinnamon. Also, I added a can of tomatoes w/green chilis and put most of the tomatoes inside of my enchiladas with the rest of the filling. Excellent!!
