English Pound Cake

I baked this cake on Christmas morning, 2014. It was absolutely fantastic. I used the exact ingredients listed but chose to whip all of the eggs into the wet ingredients before folding in the flour mixture. I think the original method could easily lead to overmixing. The flavour was perfect, the texture nice and the whole house was filled with a wonderful fragrance of cake. I drizzled a thinned confectioners sugar icing over the cake and scattered Christmas candy sprinkles on top. Two days later the small remaining piece that I hid away is still fresh and moist. By the way,I baked it for exactly 70 minutes. That seemed to work perfectly with my oven. This cake would no doubt also be wonderful if prepared with different flavours. I'm thinking lemon extract and grated lemon rind, or even as a Rum Cake with rum syrup poured over it. Thank you Valerie Lynne, for a wonderful recipe.

Samhain Pumpkin Bread

An excellent pumpkin bread, I wouldn't change any of the ingredients. My main concern was the finished size. Using the correct sized loaf pans yielded 2 very shallow loaves. In the future I will make just 1 loaf and bake it somewhat longer. Thank you for a great recipe.

Butterscotch Pudding

This is an excellent pudding, I do not find the texture to be a problem as some of the other reviewers have stated. It is however far too sweet, Seriously far too sweet. A little alarm should go off in everyone's head when there is 1 cup of sugar to 2 cups of milk. For my first attempt I reduced the sugar to 3/4 cup, and actually it will be reduced more when I make it again. It seems like 1/2 cup of sugar will actually be plenty. Tastes change, something this sweet certainly would have been the way to go years ago. Another small thing is that I whisked in 1/2 tablespoon of butter with the vanilla extract. Butterscotch has butter as one of it's flavor components, it really needs it or it should be called brown sugar pudding. All that aside, I liked it, and will make it again.
