Absolutely delicious! The whole family loved this recipe. I doubled the amt of meat and broth since I knew 1/2lb wasn't enough. Also I cooked it in my deep dish 10in iron skillet. Instead of transferring it to a pie pan I just put the crust right onto the filling in my skillet and baked it as is. It was PERFECT! Great recipe.

Excellent meatloaf! Great taste and texture... no issues with it holding its shape. The bacon on top is delicious, too. Good as is, but next time I'm going to try quickly broiling the top before baking to make the bacon crispier.

Cheesy Ham and Hash Brown Casserole

Love this recipe! It's a huge quantity... half was plenty for our family. I grated two md-lg russet potatoes instead of using frozen and it worked well. Also note though this recipe is much more like a scalloped potato casserole than hash browns, so it would be fine for a dinner. The texture is creamy and soft inside.

Pumpkin Apple Streusel Muffins

Yummy! Moist, great texture and flavor. I used pumpkin pie mix and added cinnamon, but it needs even more spice than that. Next time I'll add a lot more.

Fastest Cinnamon Rolls

Delicious!!! Not technically a yeast roll, but easy to make and oh so tender and sweet. A lovely sweet roll. Double the frosting if you have a house full of frosting lovers like I do.

Creamy Bacon Tomato and Avocado Pasta Salad

Good potential - could be a 5* with improvement. Next time I'll use creamy ranch instead of the mayo mix and I will not rinse the pasta in cold water since we prefer it warm.

Spiced Sweet Corn Fritters

4.5 ***'s - I thought they were very good, dad loved them. I used fresh sweet corn cut from the cob and cooked it over med heat for about 5-10min in 2T butter plus about 1/4c water. A nice way to use summer corn!

Daddy's Fried Corn and Onions

We loved this! I did change it a little... I simply started cooking the onions before adding the corn. We love caramelized onions so I got the onions on their way before cooking the fresh sweet corn. Very yummy!

Greens Stuffed Roasted Chicken

The chicken itself is FABULOUS, but we didn't care for the greens. There wasn't anything in particular wrong with them... just not our thing. Next time I'll just use the spice mix and clarified butter to season chicken parts.

Ham and Split Pea Soup Recipe - A Great Soup

Well, I'm not sure what I expected since I've never had split pea soup before, but this was not it. This was basically green peas with ham. It tasted fine I guess, but definitely nothing special and not something we want to eat as a soup / main dish. I gave it two stars since it does taste OK, but we won't be making this again.

Southern Baked Yellow Squash

Not bad, but quite bland and boring. I'd rather eat just boiled (or steamed) squash with butter than bother with this recipe. I'll stick with the fabulous Yellow Squash Casserole recipe when I want something along this line.

Simple Beef Stroganoff

Very yummy semi-homemade Stroganoff! One can of cream of mushroom soup wasn't nearly enough and I didn't have another, so I added a can of French Onion condensed and it worked perfectly. I also added 1/2 onion, diced and sauteed, and a small can of sliced mushrooms. I used minced garlic instead of powder. Very good!
