Super-Delicious Zuppa Toscana

I used hot italian sausage and omitted the red pepper flakes as some other reviews suggested, and totally regretted it! I had to add a lot of cracked black pepper at then end to get the heat I wanted. I also omitted the heavy cream because my bf is lactose intolerant. I didn't miss it!

Pumpkin Apple Streusel Muffins

Very good, I prefer it to the original recipe because it has less sugar and uses the whole can of pumpkin. I made the streusel in my food processor, but if you do that be careful not to overprocess! If you do, like I did, the topping will melt into the batter instead of resting on top.

Seared Scallops with Pineapple, Ginger and Lemon Grass Salsa

The salsa was five stars, but the scallops and the green beans were only three. I was worried that the salsa would not come together at first, but after 30 minutes in the fridge it was very good. Less oil would have been much better, though, since I think the honey and cider are enough liquid to bring the ingredients together. I cooked only one scallop by this method, and it came out dark brown which I think was the intention. It also smoked up my whole apartment, so I cooked the remaining scallops over low heat. The green beans were nothing special, just steamed green beans. I think I will try tossing some garlic in with them on the last saute next time.

As written, I found this recipe to be too sweet. I reduce the sugar by half or more in each batch (depending on my mood). The proportions of water:juice:honey are just right.

Orzo with Kale

This was good but not great. I followed the recipe exactly, but I ended up going back and adding more lemon and more cheese. I also has some trouble with the kale - it burned a bit and I kept having to add more oil. Worth making again, but it needs some adjustment.

Gypsy Soup

Delicious! I haven't even eaten it yet, but just from tasting I can tell this is a really good soup. I substituted carrots for the celery, and increased the broth by 1/3. I also added a few threads of saffron, since it just seemed like it would go well with the turmeric. Thanks for a great recipe!

Chocolate Chocolate Chip Nut Muffins

This is an excellent recipe. I do have one suggestion, though. The first time I did it exactly as written and filled the muffin cups 3/4 full, and instead of puffing up nicely they exploded sideways. This time I filled them all the way full and the puffed up beautifully, plump the way I think a muffin should be.
