Cranberry Pistachio Biscotti

I have made these for cookie exchanges in the past and had requests to make the again this year! My only complaint is that when making several dozen, they can get pricey because of the pistachios...but so worth it! I'll be giving these to my kids' teachers this year for Christmas :)

California Grilled Veggie Sandwich

Delicious! I did add grilled chicken breast seasoned with salt, pepper and garlic...obviously not vegetarian , lol. I also added fresh basil leaves and some grilled tomato. It was a whopper of a sammie, but a great all-in-one summer supper. Thanks!

Cheddar Buttermilk Biscuits

My husband said these were the best biscuits he'd ever had. I have to agree. I left out the cayenne due to my small kids, but still delicious. I would like to try adding some garlic next time. Great recipe!

Creamy Mushroom Meatloaf

Great recipe...made it with a pork and beef meatloaf which was delicious. Shiitake mushrooms are a must. I used a little too much flour (about 3 Tbsp.) and had to add extra beef broth while it was baking, but other than that, it was perfect.

Fresh Mango Salsa

Very tasty...and healthy! I made this with roasted chicken breasts (grilled would have been better, but it's really cold out tonight...thus, no grilling) sliced over a bed of Caribbean coconut rice. Yummy. The only thing I did differently was to omit the vinegar and use extra lime juice. I will be making this again.

Buttercream Icing

Super good...not too overpowering. I will definitely use all butter next time. I just threw all ingredients in together and whipped away (slowly at first...didn't need a face full of sugar, lol). It was easy and quick...what could be better?

Vegan Red Lentil Soup

Very yummy! I only gave it 4 stars b/c I added some things after tasting. I added cumin and black mustard seeds for seasoning, and frozen spinach. I also added chicken bouillon (I'm obviously not vegan, lol) and would use stock (veggie or chicken) next time. I then mashed the soup with a potato masher to give it a slightly thicker consistency (and to hide evidence of the squash, which my hubby hates, lol). It was a hit!

Old Fashioned Strawberry Pie

I agree with other posters that fruit pies are always tricky. Whoever made up the saying, "easy as pie" must have been referring to eating, not baking, lol! I love this recipe because it's simple. I did need to adjust things based on the berries I had. I used about 2 cups of frozen raspberries, and a generous 3 cups of fresh chopped strawberries. The amount of sugar called for was perfect for the type/amount of berries I had (I tasted it before baking, and before adding flour). I did add less cinnamon (1/4 tsp), which was perfect for my taste. I also added about 5 Tbsp of cornstarch with the flour, since I used some frozen berries (they seem juicier), no extra water. I then latticed the top. It did overflow, as expected, so be prepared! With these adjustments for the berries I had on hand, the pie came out perfectly. Great basic recipe!

To Die For Blueberry Muffins

I made these muffins the other day and they are very yummy. I didn't give them 5 stars only because I thought the muffin base was a tad bland. The topping is amazing, but I could have made half as much and been fine. I was able to get 6 large muffins out of the recipe. Do make sure to spray the tops of the muffin pans as well as the insides, as these XL muffins do overflow (like the deli-style muffins). I'm not sure what I could do to add a bit more flavour to the base...maybe vanilla or nutmeg, or both? I'll give it a try. Still a great recipe! Thanks for sharing!

Grandma Ople's Apple Pie

I have made this pie on several occasions and each time it gets rave reviews. I love the caramel sauce...what works better with apples than caramel? I did break down and add cinnamon, only because I love it and couldn't imagine an apple pie without it! I'm sure it would be delicious without it, too. Thanks, Grandma Ople! Oh, BTW, I use a fool-proof pie crust from Cook's Illustrated that calls for vodka...yes, vodka. You don't taste the vodka, it cooks off, but leaves a flaky, delicious crust that is MUCH more forgiving than normal. Give it a try!

Broccoli-Cauliflower Salad

My hubby, who is not a fan of broccoli or cauliflower, loved this salad. The only changes I made was to use Splenda instead of sugar, and real bacon bits instead of bacon...just to save some time and mess. Very yummy, a definite keeper!

Lemon Poppy Seed Bundt Cake

Very yummy! I made this as directed and there was plenty of lemon flavour for my taste. I didn't let the poppy seeds soak for that long...maybe 10 minutes (which probably did nothing). However, I loved the little bit of crunch! Oh, I also added a lemon glaze - just sugar and lemon juice. So I guess I didn't make it exactly as directed. It was delicious, though. Definite keeper!

Cinnamon Coffee Cake II

I have made this easy coffee cake several times - all with terrific results. I layer it in a bundt pan and top with a dusting of icing sugar. Next time, I will try a caramel glaze (my hubby's idea!).

Slow Cooker Carnitas

I made this dish for my daughter's first birthday party along with Ronaldo's Beef Carnitas. It was a burrito buffet - flour tortillias, homemade salsas (complements of the husband), cheese, sour cream, guac, onions, peppers, and some of our favourite hot sauces. We love Mexican food and we loved this. Thanks for sharing! ***update: After shredding the pork, I spread it out on a cookie sheet and baked it at 300 for 10-15 minutes. It crisped up a little, which was awesome!

Antipasto Pasta Salad

I made this with the "Summer Tomato Salad" and "Rotisserie Chicken" for a summer dinner party and it was a hit! One of my guests was diabetic, so all three dishes fit the bill. The only changes I made were to use whole wheat pasta instead of white and bottled Italian dressing (my grocery store had no dry mix). I used about 3/4 cup of dressing and omitted the oil. I still added the balsamic cause I love it! This made a LOT of salad...so I'm glad it was so good!

Rotisserie Chicken

Great recipe! I made it pretty much exactly as written, then used the rotisserie attachment on my grill. I did tie the legs and wings with kitchen twine, as suggested, and the wings still came out crispy and delicious, but not burnt. I also used apple wood chips in a smoker box which complemented nicely. Even my picky 17-year-old bro-in-law thought it was "wicked". How's that for a complement?

Sloppy Joes II

This recipe is excellent! My husband loves sloppy joes and was not disappointed. Much better than the canned stuff. I added some Worcestershire and a little cayenne for kick. Also good with whole wheat buns rather than white ;)
