Collard Greens with White Beans

I loved this! Like others, I cut the water (I probably only used about 1/4 cup). I also skipped the bouillon cube and used two fresh tomatoes instead of a can of diced tomatoes. With a dash of salt, a generous grinding of black pepper, and the 1 tsp of sugar -- this was a fantastic side dish!

Lentil Soup

This was really good! I made a batch for my family and even my dad[the vegetable hater] liked it! I used ~7 cups of water, two bay leaves, and more celery and carrots. Mmmmm!!

Kingman's Vegan Zucchini Bread

This was so delicious! Based on previous reviews I cut the sugar to 1/2 c. white and 1 c. brown. The rest of the recipe was followed as is and it made 12 muffins and a small-ish loaf of bread. I used the flax seeds and felt it added a little something special. I will be making this again!

Angel's Pasta

I changed the recipe a bit, but the results were awesome! I added an onion, a green pepper, and about 1/4 lb of asparagus. I used 12oz of whole wheat noodles and doubled the garlic. I know it says 8oz of pasta will serve four... but my boyfriend, his roommate and I demolished it.

Unsloppy Joes

I really liked this! I agree with some of the other reviews, it's basically chili on a bun, but the flavor was more like a sloppy joe. I definitely cut out a lot of the chili powder, this calls for way too much. My only other problem was the servings. It may have filled 8 buns, but this recipe only fed three relatively petite college kids [two girls, one guy].

Blueberry Muffins

I thought this was a really good base recipe. I made some substitutions to make it healthy and incorporate suggestions from other reviewers -- 1 c. whole wheat flour, 1/8 tsp nutmeg, 1/8 tsp cinnamon, 2 egg whites in place of the egg, and 1/4 c. unsweetened apple sauce in place of the oil. Everything else was left the same. I really liked the way they turned out!
