Microwave Lemon Curd

Quick and easy. I grounded the lemon zest with part of sugar in a clean coffee grinder to really bring out the lemon favor...it was wonderful! Also after it cooked I pushed it through a strainer for a smooth product. After it cooled, I folded it into about 2 cups of whipped topping then used it as a lemon cake filling.....so many compliments!

Slow Cooker Pot Roast

Meat was so very tender and delicious. Potatoes and celery can easily be added along with the carrots. Definitely a keeper!!

Spiced Bacon Twists

Cinnamon Raisin Bread I

Delicious! Makes three huge loaves. I stirred in the last cup of flour in by hand, even my standing mixer couldn't stir 8 full cups. The dough is thick and slightly tacky for moistness. Don't add too much flour when kneading. Will make this often; maybe as gifts for the holidays when topped with confectioner's glaze.

Quick and Easy Alfredo Sauce

Fantastic! We made this in two foods classes I teach. Couldn't get enough of it. The cream cheese takes a while to melt; be patient, when you stir in the milk it will eventually turn creamy and delicious. Yumm!!

Best Marinara Sauce Yet

This is a simple flavorful sauce. We made this in a foods class I teach; most of the students liked it. We cut the olive oil in half otherwise when the sauce sits the oil will float to the top after a while. Will make this again.

Roasted Okra

Delicious. We grew okra for the first time this year and found this recipe so very good. I did spray the foil with Pam before laying out the okra slices. Have already made this twice and will make again this weekend.

Linguine Pasta with Shrimp and Tomatoes

My husband said this recipe is even better than our favorite local restaurant dish. It was easy. I add an additional cup of chicken stock and used 1 1/2 t. of Cajun seasoning mix I found on this same website. Will definitely make again especially when entertaining.

Fabulous! I used the optional red pepper flakes and add 1/2 t. tumeric; then keep it in a ziploc bag. I have already used it in two other recipes on this website and they were fantastic.

Apple Carrot Muffins

Delicious. To add more fiber, I grated a granny smith apple with its peel and used two egg whites instead of 1 whole egg to reduce the fat content. Would definitely make this again.

Banana Sour Cream Bread

As a foods teacher, I have used numerous banana bread recipes, this is by far the best, so moist and flavorful. The outside coating makes it really different to save on fat and calories, I used 1 c. lite sour cream and 1 c. regular sour cream and poured into threes 9 X 5 1/2 X 3 inch loaf pans. Will definitely make this again and encourage my students to make also.

Easy Morning Glory Muffins

These were delicious! I'm a foods teacher at a local high school and definitely plan to have my students make these. Instead of 1 cup of vegetable oil, I substituted 1/2 cup vegetable oil and 1/2 cup applesauce. Also I got 18 muffins out of this recipe and used a granny smith apple...so moist too.

Slow Cooker Swiss Steak

My husband made this on a cold, rainy fallish day. It was easy and delicious. He served it over egg noodles. Next time we would add more salt and pepper near the end of cooking and only 1 T. of brown sugar. The flavors meld overnight and this dish is better the second day.

Johnny Appleseed Meatballs

This recipe was easy. I used seasoned bread crumbs which added more flavor and grated the apple. It was served over egg noodles and topped with a tablespoon of sour cream....I would make again.
