Pasta with Scallops, Zucchini, and Tomatoes

Wow, this was a lovely dish! The flavors were excellent and the meal was quite filling. In fact, my husband and I stretched it closer to 6 or 7 servings with out serving any other food. My only complaint is that in the recipe itself, I would have liked to have seen measured amounts for the vegetables. For example: 2 Zucchinis/3 cups. Through out the cooking process I was afraid that my zucchini was too large and that I'd have a bad proportion of zucchini to the rest of the flavors...

Unsloppy Joes

I was very disappointed in this recipe as written. The texture was great and I was excited to find a vegetarian recipe that didn't call for TVP but the flavor on this one just wasn't there. It basically tasted like tomato paste with a chili powder after taste. Once I added some BBQ sauce, the flavor greatly improved. The next time I make this, I'll use all of the same veggies but use BBQ sauce and catchup!

Caramel Popcorn

WOW!! This is the best caramel corn that I have ever tasted. The flavor was buttery and sweet and the texture was at first a light crisp but ended up melting in your mouth! I followed the advice to put the popcorn in the oven for a little bit before adding the caramel.

Pumpkin Pie Squares

This recipe was fantastic! Amazing spicy pumpkin flavor and easier than pumpkin pie (if you make your own crust as I do). My only complaint is that I would have preferred more strudel topping!

These cookies are very good...just not the best I've ever had. I found that they were a little too sweet for my liking. On the other hand, the vanilla flavor was fantastic and the texture was perfect. The next time I make this (yep I'll do it again) I'll make the cookies smaller.

Guinness® and Chocolate Cheesecake

I have made this according to the recipe EXACTLY at least 5 times. The flavor is outstanding: slightly bitter but sweet. The texture is dense and creamy in a "melt-in-your-mouth" kind of way. My husband requested it for his birthday cake and one friend even paid me to make it for him. I don't really understand all of the negative reviews. This is one of my all time favorite cheesecakes! ***Only gave 4 stars because you really should wrap the bottom of your springform in foil to protect from the water bath.

Delicious!! Great texture, flavor, and presentation. My only complaint is too much nutmeg (DH thought it was fine) but I'm not fond of nutmeg's flavor.

Tamale Pie II

This recipe was not nearly as good as I hoped. Like other reviewers, my husband and I found this to be BLAND! Also the bottom of the "crust" was very soggy. This recipe has a ton of potential but will need a great deal of modification.

Roasted Creole Potatoes

Outstanding! Mine was very spicy but I think that was due to the Creole blend (Emril's) that I used! The only change I made was that I used the entire pepper and onion, which came to about 1 cup each.

Au Gratin Potatoes II

This recipe is Fantastic! I often substitute one cup of ham for one cup of potatoes. I have also doubled the "sauce" ingredients and added broccoli and cauliflower in place of the extra potatoes. Either way makes for a great dinner!
