Garlic Scape Pesto

This was delicious and easy. I left out the lemon juice and took someone else's idea and added sundried tomatoes. Great use of the scapes!

Creamy Zucchini Soup

I served this cold with a dollop of sour cream and it was delicious. I chilled it overnight and actually liked the flavor better chilled than when it was hot. It did need a little 'something', think I will add garlic next time also. Everyone enjoyed it and I will definitely make it again, a nice way to use all the zuchinni in the summer.

Barb's Broccoli-Cauliflower Salad

Very easy and delicious. I didn't change anything and used light ranch salad dressing. I brought this salad to a potluck and it went quickly. I'll definitely make this again.

Feta Shrimp Pasta

Loved the flavor of the feta and the shrimp. Based on other reviews, I added garlic and also increased the amount of shrimp to 1/4 pound per person. I replaced the butter with olive oil and used whole wheat pasta. I had some black olives in oil in the frig and added a few of those to the finished sauce and they blended well with the feta. Will definitely make this again, very quick and good.

Creamy Chicken Casserole

Very easy and good. I took some of the suggestions and added a can of mushroom soup and cut the sour cream to 1 cup. I also added chopped broccoli. I used Panko bread crumbs on the top and they worked well. Will definitely make again.

Stuffed Peppers

This was a nice change and the sausage and tomato soup added a nice flavor. I did change a few things as mentioned by some other people. I didn't cook the peppers first and only simmered the sausage tomato mixture until the cheese melted. I substituted chicken sausage for the regular sausage and cut way back on the cheese to lighten it up. I also used brown rice, and used 2 cups cooked rice. For the soup, I used Select Harvest Zesty Tomato Bisque which has nice chunks of tomatoes and great seasoning. Will definitely make this again.

Leek and Cheese Quiche

I had some leeks on hand and went looking for a recipe to use them and found this. It's delicious and I've made it twice now. It fits perfectly in a standard 10" quiche dish (still with the 9" pie crust). I had reduced the eggs based on comments the first time I made it and had to add more. The 2nd time I made the recipe as given and it was just the right amount and cook time was correct also in the 10" dish. I also added some chopped kale into the egg mixture. Very easy and now a favorite.

Summer Zucchini Casserole

Thanks for all the comments about lightening this up. It was delicious! I sauted the zucchini, onions & carrots and used 98% fat free cream of chicken soup and light sour cream. I also replaced the butter with 1/4 cup chicken broth and 1/4 cup Smart Balance 50/50 butter. Great recipe.
