I would enjoy cooking more if I had more time after work but hubby has a kid so somewhere between cooking and bedtime we need to eat. Needless to say, my hubby says I look like the devil by the time I get out of the kitchen to say, "dinner is ready" in my evil voice.

Spaghetti Squash Casserole
This modification may defeat the purpose but I added crispy fried onions from Whole Foods after I pulled it out of the oven. :-)

Lime Cilantro Rice
Goes well with everything...Spanish, Asian, Indian, Med... You really don't have to measure, just add what you have or want. Olive oil works well too instead of butter. Add a little ginger for Asian flare.

Cranberry Salsa
I froze and thawed the cranberries and found it too "soft" and syrupy for my taste. Next time I will use half frozen and half fresh. I also used orange juice instead of liqueur. When our family would use it as a chips and salsa dip I added onions and it made a big difference! So for the reviewer, "Mickey", I think I understand your disappointment and fresh chopped onions is what was missing for you. I also used the salsa for our holiday dressing rather than traditional cranberry sauce, and added cream cheese of course for a spread.
