Creole Chitterlings (Chitlins)
I made these for the hubby this weekend (he hadn't had any in 10 years!). He could not stop eating them! I thought I had Creole seasoning but didn't, so I used seasoning salt and pepper instead. Fantastic! However, cleaning chitlins is not fun, lol Btw, I don't even eat chitilins and still managed to smoke this recipe! lol

Jamaican Oxtail with Broad Beans
This was incredible! I followed the recipe except I used a crock pot because I don't have a slow cooker, I left out the scotch bonnet chile pepper, and the allspices berries because I couldn't find them. I added the beans and the cornstarch after 5 hours of cooking it on high in the crock pot. After another hour, it was done. My husband, who was not a big fan of oxtail, declared these to be the best oxtail he's ever had. Will definitely be using this recipe again.

Mushroom Pork Chops
This is a great base recipe! We loved it! I made some adjustments, based off other reviews. I sauteed mushrooms, onion, and garlic, then browned the chops. I deglazed the pan, then added the veggies, 2 cans of golden mushroom soup, and some milk. Mixed it all togethre and added the chops back in and simmered for 30 minutes. Served over rice with a side of string beans. This is going into our regular rotation!
