Blonde Brownies I

Yum! I didn't have quite enough chocolate chips so I used some white choc ones, too. I also added about 2/3 c coconut. Delish!

Orange Blueberry Muffins

I used whole wheat flour to replace the all purpose and applesauce to replace 3/4 c of the veg oil. I also added extra blueberries. Pretty darn good. The orange flavoring is very subtle, but they are good even without it being too strong.

Dad's Double Whole Grain Pancakes

Wow! Even my little ones gobbled these up. Very tasty. I used applesauce instead of butter and didn't miss the butter one single bit. They were light and thin pancakes, but that's the way I like them.

Pumpkin Gingerbread

Man, I would give this 10 stars if I could. It tasted like fall perfection! It was perfect as written, but I made a couple changes just to make it a tad healthier. I only used about 2 1/2 c of sugar. I used 3/4 c applesauce with 1/4 c veg. oil, and I substiuted whole wheat flour for half of the flour. I wouldn't dare mess with the flavors in this recipe. It is perfect as written.

Really tasty. I used diced tomatoes in their juice instead of the tomato sauce and also sauteed some bell pepper with the onion and added some chili powder.

S'mores Bars

Yum! I didn't have any peanuts on hand so I used peanut butter chips on the top along with the chocolate chips. The brownie center is amazing and I was surprised to find the grahams on the bottom still intact and delicious even after baking underneath the brownie batter. I turned on the broiler for just a minute or two after the 5 minutes with the marshmallows to give them that nice, roasted color and flavor.

Pico de Gallo Chicken Quesadillas

Mmmm, mmm, mmm! These were so tasty! I followed the recipe except for getting lazy at the last minute and using canned chicken, but it was really great! I used the flour tortillas for my kids and I used corn tortillas for my own because of fewer calories and higher fiber. We all loved them! I also cut back on calories by heating my griddle to 375 and using Pam cooking spray on the griddle and then spraying the tortilla tops again before flipping them over to cook on the other side. Definitely going to be a favorite recipe now!

Layered Chicken and Black Bean Enchilada Casserole

I thought this was delicious! I sauteed some red onion in with the chicken and added a little garlic. I also only added the sour cream as a topping. Might fine mexican casserole!

Zucchini Brownies

We really loved these! I used whole wheat flour instead of the all purpose white and I omitted the nuts. I also chose to dust with confectioners sugar instead of icing them. Delicious!

Blueberry Zucchini Bread

I followed another reviewer and made a crumb topping for this out of oatmeal, softened butter, and sugar. I also used whole wheat flower for 2 of the cups of flour. Even without the topping it would be delicious.

Mandarin Chicken Pasta Salad

This salad was D-E-licious! I noticed some reviewers were saying that it was a lot of prep work, but I didn't think it was a big deal and it went together pretty quickly. I grilled the chicken for mine and it added some nice texture and a deeper flavor. The dressing was divine!

I love this recipe! I love the healthy goodness to it and the fabulous taste is just the cherry on top for me! I didn't have any wheat germ so I left that out, but followed the rest of the recipe exactly and I am very happy with the results!

Oh man, this was good! I gambled on a new recipe by tripling it so I could have some to freeze and it really paid off! Such a good breakfast topping and I am sure that it will be great on everything else, and really on its own, too!

Chili-Lime Chicken Kabobs

Oh my! This was fanstastic! I marinated the chicken as suggested but set aside a bit of the marinade to baste onto the kabobs while they were grilling. It was delicious!!

Zucchini Carrot Muffins

These were delicious! I added some fresh grated carrot- maybe 1/3 c along with the zucchini and then craisins instead of raisins and baked them in mini muffin size! My little girls LOVE them!
