Pumpkin Spice Bread

Absolutely delicious! It really does taste like pumpkin pie, and everyone who tasted it said the same thing--especially when they ate it with vanilla or cinnamon ice cream. I highly recommend this recipe!

Zucchini Brownies

EXCELLENT! These are the best brownies I've ever had. In fact, they are more like a very moist cake. I had a bumper crop of zucchini this summer, so I have made several batches of these brownies, and everyone I give them to LOVES them. In fact, I have shared your recipe with a couple of people. These brownies freeze very well, too, so if you have a lot of zucchini and can double the recipe, I would recommend doing that. Such a tasty treat! Thank you for sharing your recipe!

Heavenly White Cake

Excellent! This cake definitely lives up to its name . . . "heavenly." I wanted a light, white cake that I could make for my mom's birthday, so I chose this one and layered it with pistachio pudding and frosted it with whipped cream. Delicious!

Minted Marinated Zucchini

I can't get enough of this! I have a huge mint patch and lots of zucchini, so this recipe is perfect! I am a zucchini-lover no matter how it is prepared, and if you are, too, I would highly recommend this recipe! It is very simple to make and makes for a wonderful meal all by itself.

Homemade Peanut Butter Cups

Terrific! If you love peanut butter cups, you'll feel like you just opened a store-bought package when you taste these. My mom and I made them the other day, and that was fun in itself. We did run out of the peanut butter mixture with still three cups to fill (that was because our cups were slightly larger than the recipe called for), so we just substituted with a spoonful of peanut butter. Those were good, too. Thank you for sharing this recipe! It will be used again, for sure!

Sweet Zucchini Relish

This is the second summer I have made this with all of my garden zucchini, and I have to say, I can eat it by itself! I made a few changes to it this year: I omitted the nutmeg and added curry powder and cumin. I love to look at recipes and get ideas from them, but it's always hard for me to follow one exactly. Everyone's taste is different, of course. I highly recommend this recipe to anyone who loves relishes and has a lot of zucchini to use! More next year, indeed!
