Upside Down Pizza

I make this recipe using 2 cups of shredded cheddar cheese instead of the parmesian. I've also used ground turkey instead of the ground beef, or thrown in some crumbled, browned italian sausage with the ground beef. Use a 14 ounce jar of pizza sauce instead of the spaghetti sauce (Ragu quick sauce is great). Mix the brown ground meat with the sauce and one beaten egg (save 1 Tbs of the egg). I place the meat mixture in the dish and layer the cheeses over it. Roll the crescent rolls out to completely cover the ingredients, and brush the Tbs. of egg over the dough to get a golden crust.

Single Crust Peach Pie

This had wonderful flavor. I added cinnamon instead of nutmeg. My pie also turned out quite soupy, probably because the peaches were so juicy. We just ate it in bowls with ice cream or whipped topping. Thanks for sharing!

Sweet and Sour Sauce II

This is a great recipe! I used 8 ounces of tomato sauce because I didn't have any tomato paste on hand. Also used 8 ounces of crushed pineapple instead of tidbits for the same reason. :) I added this sauce to a basic chicken stir fry recipe and served it over rice. Yummy!!!

Abby's Super Zucchini Loaf

This bread is yummy!! I made a single loaf, using half the ingredients with 2 eggs, adding 2 tablespoons of brown sugar, 1/8 tsp. ground cloves, and baking for 45 minutes. I'm tempted to bake this bread in a 9x13 pan and frost it with cream cheese frosting since it's more cake like than bready! I'll no longer have to wonder what to do with all the zucchini from my garden!! :)

Bow Ties with Sausage, Tomatoes and Cream

This was yummy. I used milk instead of the heavy cream, and we garnished with sliced black olives and grated parmesian cheese. It's great as leftovers. My son requested that I make this again. :)

Stuffed Cabbage Rolls

I saute 1/4 cup chopped green pepper with the onion before adding to the meat mixture. I also cook for at least an hour. These are even better the next day.

Fruit Dip I

Zucchini Cobbler

This was great! Actually, we liked it better the second day. I needed 6 cups of zucchini, maybe because I sliced rather than chopped it. I'm going to try this with apples this coming Fall. Yummy flavor!

Triple Berry Crisp

This was great! I used 2 cups of raspberries, 2 cups of blackberries, and 2 cups blueberries; also increased the sugar in the berries. Thanks for sharing this wonderful summertime treat!

Spinach and Strawberry Salad

This salad is wonderful!! I added a little chopped red onion, and used only half the seeds suggested. Be sure to add the dressing at the last minute so the spinach doesn't get too soggy. Thanks for sharing!

Italian Stuffed Zucchini

This was yummy! My family was skeptical, as the presentation isn't REAL attractive, but they agreed the taste was great! I used 2 cups of browned ground round, as we don't like the TVP. My zucchini were small, so I used only a small portion of the scooped out portion in the recipe. Even then there was quite a bit of leftover filling, which I baked separately. This recipe will be a great help when we are overrun with our garden zucchini! Thanks!

Corn and Zucchini Melody

We all thought this was great!! I used less than a tablespoon of bacon fat in a no-stick pan, sauteeing the squash and onion for 5 minutes, then adding the corn and heating for the 10 minutes. Wonderful flavor, color and texture! Thanks!!

Peach Cobbler II

This is delicious! I used 5 peaches (and could use more), 1 1/2 cups sugar, and used only 1 cup boiling water. I baked it in a 11x11 casserole dish with good results. Thanks!!

Meatloaf with Italian Sausage

This meatloaf has a nice flavor and texture; I think the cream of wheat cereal is the key. I microwaved the onions and green peppers before adding them to make sure they would be well cooked. Possibly next time I'll bake at a lower temperature, as all the sides of the loaf were a bit tough. Adding Italian seasonings, garlic, and topping with ketchup before baking gives even more of an Italian flavor. Thanks!

Easy Lasagna II

This recipe saved the day when I had 5 college kids drop by for dinner unexpectedly. I used the "no-boil" lasagna noodles, mild Italian sausage instead of hamburg, and 60 ounces of spaghetti sauce, leaving out the water. I also layered in some fresh baby spinach leaves. It was a big hit!! Thanks!!
