Easy Lasagna II

This recipe saved the day when I had 5 college kids drop by for dinner unexpectedly. I used the "no-boil" lasagna noodles, mild Italian sausage instead of hamburg, and 60 ounces of spaghetti sauce, leaving out the water. I also layered in some fresh baby spinach leaves. It was a big hit!! Thanks!!

Bread Pudding I

This has a great flavor. I should have read the reviews and used one less egg, as this bread pudding was too "custardy" for me. But the rest of the family loved it. I used 3 1/2 cups of cubed baguette, which is more dense than some white breads and makes a firmer pudding. I will make it again, thanks!

Zucchini Brownies

Adding the 2 eggs makes this more like a very dense cake than brownies. Next time I'll leave them out. Also will try using a lighter oil or maybe applesauce, as we could taste the oil. Overall it had a nice flavor, and there was no way to tell there is zucchini in this cake! That's a plus! This frosting went well with this recipe. Thanks.

Salsafied Chicken and Rice

This has good flavor, but I wonder if the 2 cups of instant rice isn't too much. I included 16 ounces of salsa instead of only 8, and added 1/2 cup sour cream and 2 tablespoons green chilies before the rice. I served it with taco sauce and tortilla chips. You can also throw in a cup of corn, or serve with corn bread.

Upside Down Pizza

I make this recipe using 2 cups of shredded cheddar cheese instead of the parmesian. I've also used ground turkey instead of the ground beef, or thrown in some crumbled, browned italian sausage with the ground beef. Use a 14 ounce jar of pizza sauce instead of the spaghetti sauce (Ragu quick sauce is great). Mix the brown ground meat with the sauce and one beaten egg (save 1 Tbs of the egg). I place the meat mixture in the dish and layer the cheeses over it. Roll the crescent rolls out to completely cover the ingredients, and brush the Tbs. of egg over the dough to get a golden crust.

Deviled Eggs I

I make this recipe using 1/4 cup of salad dressing, 1/2 tsp prepared mustard instead of the dry, and I add 1/2 tsp vinegar to give it some zing. The "stuffing" is creamier this way.

Meatloaf with Italian Sausage

This meatloaf has a nice flavor and texture; I think the cream of wheat cereal is the key. I microwaved the onions and green peppers before adding them to make sure they would be well cooked. Possibly next time I'll bake at a lower temperature, as all the sides of the loaf were a bit tough. Adding Italian seasonings, garlic, and topping with ketchup before baking gives even more of an Italian flavor. Thanks!

Bacon and Potato Soup

This was very tasty! I used regular chicken broth, not low salt. I pureed half of the soup mixture in the blender, then added it to the remaining soup with the bacon. That made for a nice texture. I added some corn and chopped ham to the leftovers the next day for a hearty lunch. This is a keeper, thanks!

Sweet and Sour Sauce II

This is a great recipe! I used 8 ounces of tomato sauce because I didn't have any tomato paste on hand. Also used 8 ounces of crushed pineapple instead of tidbits for the same reason. :) I added this sauce to a basic chicken stir fry recipe and served it over rice. Yummy!!!

Reuben Sandwich I

Mozzarella cheese doesn't really have much flavor. I don't consider this a Reuben sandwich since it doesn't have Swiss cheese and Thousand Island dressing. It has a nice little flavor in itself, but true Reuben lovers will know something's missing.

Quick and Easy Monkey Bread

Not sure how to rate this. My kids liked it. I didn't care for the chunks of hard, buttery sugar. I have a similiar recipe which calls for the pudding mix and brown sugar to be dissolved in the melted butter, along with 2 tablespoons of milk. If I make it again, I will also cut each roll in half, as they grow quite large overnight.

Quick and Easy Cheese Bread

This was ok. I used 1 cup of milk so the bread would be less crumbly. I suggest using sharp shredded cheddar because the mild cheddar wasn't strong enough to add flavor to the bread.

Pepperoni Bread

This was good sliced, spread with pizza sauce, and heated. It would be nice to know how large of a rectangle to roll the dough before adding ingredients. Next time I'll use more cheese.

Cinnamon Carrot Bread

I liked this. I used a bit more carrots, more cinnamon, a dash of ginger and ground cloves, and left out the nuts. Keeps well in the frig, and tastes better as it ages. Thanks.

Broccoli Salad I

I use dried cranberries instead of raisins, and leave out the seeds as my family doesn't like them. Also, add a cup of cubed (~1/2 inch pieces) sharp cheddar cheese for more pizzaz! It's best to add the dressing right before serving, or the broccoli will be soggy.

Italian Stuffed Zucchini

This was yummy! My family was skeptical, as the presentation isn't REAL attractive, but they agreed the taste was great! I used 2 cups of browned ground round, as we don't like the TVP. My zucchini were small, so I used only a small portion of the scooped out portion in the recipe. Even then there was quite a bit of leftover filling, which I baked separately. This recipe will be a great help when we are overrun with our garden zucchini! Thanks!

Pumpkin Dessert

This is a nice change. Next time I'll add ground cloves and a bit more sugar to the filling. I used pecans instead of walnuts on half; the other half I left plain for those who can't eat nuts. Nice when served cold with a generous squirt of real whipped topping! :) Thanks!

Deep Dish Layered Salad

This was ok, but had too much lettuce. I think twice the eggs and bacon may have made it better. I make a similiar salad, but build it in a 9x13 glass dish; that way the dressing is distributed over more of the salad ingredients.
