Abby's Super Zucchini Loaf

This bread is yummy!! I made a single loaf, using half the ingredients with 2 eggs, adding 2 tablespoons of brown sugar, 1/8 tsp. ground cloves, and baking for 45 minutes. I'm tempted to bake this bread in a 9x13 pan and frost it with cream cheese frosting since it's more cake like than bready! I'll no longer have to wonder what to do with all the zucchini from my garden!! :)

Bow Ties with Sausage, Tomatoes and Cream

This was yummy. I used milk instead of the heavy cream, and we garnished with sliced black olives and grated parmesian cheese. It's great as leftovers. My son requested that I make this again. :)

Upside Down Pizza

I make this recipe using 2 cups of shredded cheddar cheese instead of the parmesian. I've also used ground turkey instead of the ground beef, or thrown in some crumbled, browned italian sausage with the ground beef. Use a 14 ounce jar of pizza sauce instead of the spaghetti sauce (Ragu quick sauce is great). Mix the brown ground meat with the sauce and one beaten egg (save 1 Tbs of the egg). I place the meat mixture in the dish and layer the cheeses over it. Roll the crescent rolls out to completely cover the ingredients, and brush the Tbs. of egg over the dough to get a golden crust.

Stuffed Cabbage Rolls

I saute 1/4 cup chopped green pepper with the onion before adding to the meat mixture. I also cook for at least an hour. These are even better the next day.

Gramma's Apple Bread Pudding

I must have done something wrong. The bread pudding was watery, even though I used French bread and baked it for an hour. The sauce was too thin. The overall flavor was ok, but I won't make this one again. Sorry.

Deviled Eggs I

I make this recipe using 1/4 cup of salad dressing, 1/2 tsp prepared mustard instead of the dry, and I add 1/2 tsp vinegar to give it some zing. The "stuffing" is creamier this way.

You have to really love mustard to like this recipe. I used only 1/4 of what was called for and it was too much for my kids. Nice idea but not for everyone.

Easter Leftovers Frittata

Are you sure it should be 8 ounces of pasta? Don't see how this was supposed to be "flipped" with all that spaghetti. We ended up with a rather unappetizing display. The flavor was ok.

Strawberry Soup I

Yum!!! This is great! I used light, fat free vanilla yogurt and half the water for an out of this world fruity treat! You can also omit the water and blend in a cup of crushed ice for a smoothie! Make extra!

Salsafied Chicken and Rice

This has good flavor, but I wonder if the 2 cups of instant rice isn't too much. I included 16 ounces of salsa instead of only 8, and added 1/2 cup sour cream and 2 tablespoons green chilies before the rice. I served it with taco sauce and tortilla chips. You can also throw in a cup of corn, or serve with corn bread.

Italian Stuffed Zucchini

This was yummy! My family was skeptical, as the presentation isn't REAL attractive, but they agreed the taste was great! I used 2 cups of browned ground round, as we don't like the TVP. My zucchini were small, so I used only a small portion of the scooped out portion in the recipe. Even then there was quite a bit of leftover filling, which I baked separately. This recipe will be a great help when we are overrun with our garden zucchini! Thanks!

Pizza Salad II

Yum! This was a big hit with us!! I used turkey pepperoni and Light Done Right dressing to cut down on the fat content. This is a great salad to take to a picnic or pot luck dinner. Thanks!

Overnight Bubble Bread

I added the pudding mix to the butter/sugar mixture, along with 2 TBS milk, then poured it over the rolls. Invert the pan onto a serving dish immediately after taking out of the oven to help coat each roll. The flavor was great.

Broccoli Salad I

I use dried cranberries instead of raisins, and leave out the seeds as my family doesn't like them. Also, add a cup of cubed (~1/2 inch pieces) sharp cheddar cheese for more pizzaz! It's best to add the dressing right before serving, or the broccoli will be soggy.

Spinach Dip with Water Chestnuts

We make this dip, but we use a package of Ranch Dip mix instead of the soup mix. Also add 1/4 cup finely chopped sweet red pepper. We also serve the dip in a hollowed out pumpernickel bread, using the bread for dipping! Can be served with raw veggies too.

Summer Squash Casserole

Unfortunately we didn't like this recipe. There were too many carrots, and although I only used half the croutons, the soggy consistency was pretty unpalatable. Maybe using a little stuffing mix would be better, as the overall taste was pretty bland. Sorry.
