Apple Dumplings I

These were great right out of the oven. Reheating doesn't work very well. As stated before, the apples need to be very small, or use 1/3 instead of 1/2 apple for each. I sprinkled the apples with sugar/cinnamon before wrapping.

Baked Shells in Sauce

We loved this basic recipe. I used spaghetti sauce (more than called for) and added some browned Italian sausage and a few red pepper flakes. The browned mozarella cheese on top made the dish! Thanks!

French Beef Stew

My husband said it was ok, but I couldn't eat it. It had a sour flavor and unappetizing color. My family has owned a butcher shop for 50 years, so I'm used to great meat dishes. I'm afraid this one won't be added to my collection, sorry.

Pepperoni Bread

This was good sliced, spread with pizza sauce, and heated. It would be nice to know how large of a rectangle to roll the dough before adding ingredients. Next time I'll use more cheese.

This is better if you omit the canned veggies and milk, add 2 Tablespoons minced fresh onions, 2 tablespoons of sweet relish, and a cup of frozen petite peas.

Eggplant Parmesan I

Overall this was pretty good. I browned the eggplant slices (unpeeled, and skipped the salt step) in a tiny bit of olive oil in a non-stick pan. Next time I'll make the slices thinner and lightly coat in bread crumbs before browning. This is better the second day. Thanks.

Single Crust Peach Pie

This had wonderful flavor. I added cinnamon instead of nutmeg. My pie also turned out quite soupy, probably because the peaches were so juicy. We just ate it in bowls with ice cream or whipped topping. Thanks for sharing!

Potato and Vegetable Frittata

This was pretty good, but a bit bland. I think I made the potato cubes too large; next time I would cut them smaller and make sure they browned before the next step. I think I would also add more salt, or maybe more spices. I will make it again with a few variations. :)

Zucchini Cobbler

This was great! Actually, we liked it better the second day. I needed 6 cups of zucchini, maybe because I sliced rather than chopped it. I'm going to try this with apples this coming Fall. Yummy flavor!

Caribbean Sweet Potato Salad

I would never consider this a substitute for regular potato salad. This might be a good side dish for an open minded group, but even the most adventurous eaters at our gathering weren't impressed with the very different flavor. Sorry.

This was great! I used 2 cups of raspberries, 2 cups of blackberries, and 2 cups blueberries; also increased the sugar in the berries. Thanks for sharing this wonderful summertime treat!

Spinach Fettuccini with Broccoli and Ham

This recipe has potential. I added a clove of minced garlic to the sauteed onions to give the dish a little pizzaz. 1/2 cup of creme fraiche isn't enough for all that pasta; I used 1 full cup AND 1/4 cup sour cream. A little shredded cheddar cheese might also be a good addition. Overall, this recipe has a nice presentation and texture, but the flavor is quite unremarkable.

Quick and Easy Cheese Bread

This was ok. I used 1 cup of milk so the bread would be less crumbly. I suggest using sharp shredded cheddar because the mild cheddar wasn't strong enough to add flavor to the bread.

Spinach and Strawberry Salad

This salad is wonderful!! I added a little chopped red onion, and used only half the seeds suggested. Be sure to add the dressing at the last minute so the spinach doesn't get too soggy. Thanks for sharing!

Hot Chicken Salad II

This was pretty bland, and we were kind of grossed out by the texture of all the water chestnuts. If I were to make it again, I'd add sautee'd onions and maybe some garlic, sage, thyme or something to spice it up.
