Classy Chicken

After all the rave reviews, I was pretty disappointed in the results. The sauce was too "sour" for our taste. It is fairly low fat, which is a plus I guess.

Cinnamon Carrot Bread

I liked this. I used a bit more carrots, more cinnamon, a dash of ginger and ground cloves, and left out the nuts. Keeps well in the frig, and tastes better as it ages. Thanks.

Egg and Sausage Casserole

I used this basic recipe, with my own additions. I added some chopped mushrooms to the eggs, and put a single layer of baby spinach leaves over the sausage before pouring the egg mixture. Baked at 350 for 20 minutes, then 325 for another 20 minutes with good results. Cool for 5 minutes before serving so the eggs set.

Apple Banana Cupcakes

Easy Ham and Noodles

If you saute some onions and garlic in butter (or margarine or low trans spread), then add to this mixture, it greatly improves the flavor. I also top with crushed potato chips before baking.

Bean Soup

This soup is GOOOOD!! I didn't make the soup with the soaking water, rather replaced it with fresh cold water. I threw the carrots, onions, bay leaf and celery in at the beginning, added a few peppercorns and another tsp of salt, then cooked for 1 1/2 hours. Also added a couple tablespoons of instant brown rice at the end, just to thicken it up a bit. This will be good tomorrow when the temp outside is a high of 20 degrees!! Thanks!!

Pumpkin Dessert

This is a nice change. Next time I'll add ground cloves and a bit more sugar to the filling. I used pecans instead of walnuts on half; the other half I left plain for those who can't eat nuts. Nice when served cold with a generous squirt of real whipped topping! :) Thanks!

This is a great soup to come home to on a cold day! I used frozen green beans instead of canned, and added 1/2 cup chopped chicken. Freshly grated cheese on top....YUM!!!! Thanks for sharing!

Deep Dish Layered Salad

This was ok, but had too much lettuce. I think twice the eggs and bacon may have made it better. I make a similiar salad, but build it in a 9x13 glass dish; that way the dressing is distributed over more of the salad ingredients.

Sweet and Sour Sauce II

This is a great recipe! I used 8 ounces of tomato sauce because I didn't have any tomato paste on hand. Also used 8 ounces of crushed pineapple instead of tidbits for the same reason. :) I added this sauce to a basic chicken stir fry recipe and served it over rice. Yummy!!!

Bacon and Potato Soup

This was very tasty! I used regular chicken broth, not low salt. I pureed half of the soup mixture in the blender, then added it to the remaining soup with the bacon. That made for a nice texture. I added some corn and chopped ham to the leftovers the next day for a hearty lunch. This is a keeper, thanks!

Bread Pudding I

This has a great flavor. I should have read the reviews and used one less egg, as this bread pudding was too "custardy" for me. But the rest of the family loved it. I used 3 1/2 cups of cubed baguette, which is more dense than some white breads and makes a firmer pudding. I will make it again, thanks!

Reuben Sandwich I

Mozzarella cheese doesn't really have much flavor. I don't consider this a Reuben sandwich since it doesn't have Swiss cheese and Thousand Island dressing. It has a nice little flavor in itself, but true Reuben lovers will know something's missing.

Coconut Cake I

You have to really LOVE coconut to like this cake because it's filled with a LOT of coconut. I may have liked it better with less coconut between the layers and more toasted coconut on the top and sides of the frosted cake. Be sure to slice the cake into small servings unless you are really hungry for coconut.

Corn Salad II

Something is missing in this salad. I sampled some an hour after I made it and thought it had a strange flavor. I think I'll add some crumbled bacon and maybe some shredded cheese and maybe some tabasco sauce before I serve it to the rest of the family.

Ham and Cheese Quiche

Mmmmm-mmm!! This was a great supper! I used 2 containers of egg beaters (= 4 eggs) instead of real eggs, 2 sliced green onions, garlic powder, and a whole cup of chopped baby spinach leaves, along with all the other ingredients (smoked ham, not canned)....baked in a deep dish crust. This is a keeper!! Thanks!!
