Rice Flour Pancakes

This recipe is worth a second try. Made them per recipe and waited one hour. Was a little runny, but continued to thicken as it sat on the counter, so second batch was thicker than first batch. I added blueberries to the batter that I spooned into the electric frying pan. So next time I will refridgerate over night to obtain thickness and/or maybe add a 1t of baking soda per other review.

Apple Pie by Grandma Ople

This is the most perfect pie ever!. I didn't have Granny Smith's so I used Ida Reds. My son didn't like apple pie and now he does. It's not too sweet nor is it too tart. Just right!

Steak Stir-Fry

I didn't have beef stock, so I just used the boiling water. I also marinated the beef for an hour in sauce, then stir fried veggies while waiting like an earlier suggestion. I think it added more flavor to the beef. Also, cooked beef in sauce for an additional half hour to reduce any toughness. Beef and sauce were very flavorful. It's a keeper!

Angel Hair Pasta with Garlic Shrimp and Broccoli

The family loved this dish! It's an alfredo dish without the richness. The only thing I did different was fat free milk & half & half. I also doubled the sauce. My son and husband remarked that it tasted just like Applebees' Chicken Alfredo Pasta Bowl. This is definitely a keeper.

Grandmother's Buttermilk Cornbread

Like everyone else, I've tried tons of recipes and this has to be the BEST! I have a sweet tooth, so this was the first time I've found a recipe that was sweet AND moist. I served it with my homemade chicken chowder soup. It was great for soaking up the broth! I did have to use up some plain yogart I had in the fridge & it worked great! Every oven and baking dish is different, so I check all my baked recipes 5-10 minutes before the recommended time.

Creamy Twice-Baked Potatoes

Very yummy & creamy! Perfect. Because I baked potatoes in foil, I just had to be careful when scooping out the insides. They turned out fine. I would like to try it again with chives & green onions for added flavor.

Chicken Enchiladas I

Very tasty! I did not read the comments before I started cooking, so I made the dish according to the recipe. The mixture was way too running, so I reduced the heat and cooked it until it became a thick sauce. It worked perfect & everyone loved it. I'm going to try it in the future with the enchilada sauce to compare the difference in taste.
