Cheeseburger Meatloaf

Super simple and very good! I had no problem rolling it up using the wax paper to help mold it. I used ground elk which is very lean so no oily problems. Lots of onion flavor and I like that.

Cheeseburger Muffins

This simply did not go well at all. We just didn't really enjoy them and they stuck to the muffin papers really bad even after being sprayed.

Roasted New Potatoes

I usually make this with whatever potatoes I have in the pantry cut smallish and tend to go a bit rogue with the spices and use whatever sounds good. I'm always happy with it!

Coconut Rice

This was really good. I adjusted the rice to liquid ratio using 1cup rice and one can coconut milk plus about 1/2c water. I didn't have fresh ginger so I used powder, I also added peas. Rather than throwing everything in the pot I first sautéed the onion in olive oil for a few minutes on medium, added frozen peas for a few minutes then stirred in the rice and cooked in the oil for a minute before adding everything else and finishing according to the recipe. It was a lovely curry rice pilaf.

Spiced Potatoes

Very good and easy. After reading reviews I cut the Cayenne in half and didn't find it spicy at all, next time I'll try it as written. I also didn't have onion salt so I used garlic salt in place of garlic powder and onion powder in place of onion salt, otherwise exactly as written and they were great!

Crispy Oven-Fried Fish Fillets

Easy and tasty. I used Italian style breadcrumbs instead of croutons and added salt and pepper to the flour and skipped the first milk dip.

Beef Bulgogi

Fantastic! I'd never heard of beef bulgogi so I can't weigh in on authenticity, but this tastes great. A little strong, I only marinated a little over an hour and would definitely not do so any longer. Easy and tasty.

Chicken and Bacon Shish Kabobs

This is one of my go-to BBQ choices especially if I want to show off a little. Easy and can prep ahead of time so I can enjoy the BBQ without much work to do. The bacon makes it easier to get the chicken cooked through without getting dry or overdone on the outside.
