Brooke's Best Bombshell Brownies

The perfect brownie! No more box mix for us! I ignored the chocolate chip directions, though. I used 1/3 cup each of Ghirardelli milk chocolate, semi sweet, and dark chocolate chips, plus 1/3 cup of finely chopped hazelnuts. OMGoodness, how perfect!!!!!!

Banana Muffins with a Crunch

Very tasty! I didn't have any granola so I substituted some Ghirardelli chocolate chips. Net time I'll had add a teaspoon of cinnamon to the batter, it goes well with chocolate. I also added an extra small banana because when I was pulling the banana off, that one broke open. This recipe made way more than 24, though, it actually made 36 regular sized muffins. And I didn't know I was out of muffin paper so I just sprayed the muffin tin with baking PAM and they came out perfectly. Since it made so many I plan on freezing half of them and keeping the others in an airtight container to have the the news few days. Oh, and one more thing. The batter is SOOOO good! YUM! And this coming from someone who is not a batter/cookie dough eating kind of girl, either. So yummy!

Cheddar and Red Pepper Rice

Mmmm, this was quite tasty! Great new side dish for the family. I had leftover rice and green peas when I came across this recipe, so I steamed them and then followed the recipe except I added another clove of minced garlic and I used extra sharp cheddar fora little more bite. SOOO good. Total comfort food.

Meatball Nirvana

They had good flavor, but the texture was really soft. Kind of like Chef Boyardee meatballs. But I do like the idea of baking the meatballs and adding onions and cheese, but I definitely won't be adding the bread crumbs or the milk next time. I just don't see a good reason to ever put MILK in meat.

Sugar Cookie Drops

I didn't like them. There was a funny taste....maybe it was the confectioner's sugar? Or maybe the cream of tartar? I don't know. I was very disappointed because I've made way better sugar cookies from other recipes.

Mom's Pumpkin Pie

WOW! I thought regular Libby's pumpkin pie recipe was good, this was SO much more flavorful and decadent! My goodness. You have never had pumpkin pie like this! Try it! Only thing I changed was that I used evaporated milk instead of regular milk, and I also added a 1/2 teaspoon of allspice. Oh, and I didn't use fresh pumpkin, I used 1 regular sized can of Libby's 100% Pure Pumpkin. This made 2 Pet Ritz deep dish pies (baked together on a cookie sheet, important!)and it got RAVE reviews!
