This recipe is a fantastic base. I made it according to directions the first time with sides of cheese, tortilla chips, and avocado on the table. I’ve since made this recipe multiple times and true to form have doctored it up many different ways. I make my own stock weekly and this is a great way to reduce the sodium in this soup. I like to roast a chicken on Sunday and the leftover dark meat is great to throw in the pot. (The carcass gets used for stock the next week.) I usually throw in some combination of cumin, Tabasco, cilantro, garlic, and maybe a few bits of onion if it’s left over from something else. This is a great recipe to always have the ingredients on hand and customize it to whomever you’re cooking for. Just always remember the avocado and tortilla chips! Thank you for an amazing base recipe. The boyfriend always gives it a double thumbs up, and is always disappointed when he orders this at restaurants. He always says “It’s not as good as yours.”
