Luscious Spinach Artichoke Dip

This is a really great easy breezy party dip. I always double the recipe. I do use light mayo and sour cream. I also change the cream cheese to neuchatel to save a few fat calories. Noone can eat just one serving of this. I also bake uncovered with some extra romano or parmesan cheese on top, I like a bit of crunch on top. Crowd pleaser!

Zucchini Parmigiana

This was a nice alternative to a traditional lasagna, however it was somewhat bland. The only changes I made were to use my own homemade marinara sauce and to cut the recipe in half. I followed all other directions. I felt there was too much ricotta adding weight to the lasagna. This was a time intensive recipe that I think will not be repeated in my home. BF and I both added additional spices at the table (I added hot pepper flakes, he added frank’s hot sauce.) I’ll stick with the cooking light version of zucchini parmesan.

Meatball Nirvana

Super duper amazing! I always get raves from the boyfriend when I make these. I generally make a double batch and freeze the second batch in two packages (seal and save) they reheat exceptionally well on a weeknight. I think Frank's is the secret!

Chicken Creole

I made several changes to this recipe after reading reviews. This was a nice easy recipe for a weekday. It also used many of the ingrediants I keep on hand. I did brown a hot italian sausage with the onion mix for extra fat and flavor. This time I added italian seasoning and paprika to the chicken before I browned it. Next time I will use chicken tender cuts or tenderize the chicken and flatten it before I brown it. I really like that I can turn this into whatever I have on hand. I did half the recipe, it made enough for two, and left overs for lunch the next day.

Irish Chicken and Dumplings

This was a wonderful easy filling recipe. I used leftover turkey legs from Thanksgiving so I was able to save time on this recipe. I did add paprika on top of the bisquik mix and browned the top in the broiler for the last few moments for a crispier crust. I also halved the recipe and it made enough for a nice dinner for two with a green salad and left overs for both of us the next day. It will stay in a regular rotation for using left over poultry for a quick meal.

Six Can Chicken Tortilla Soup

This recipe is a fantastic base. I made it according to directions the first time with sides of cheese, tortilla chips, and avocado on the table. I’ve since made this recipe multiple times and true to form have doctored it up many different ways. I make my own stock weekly and this is a great way to reduce the sodium in this soup. I like to roast a chicken on Sunday and the leftover dark meat is great to throw in the pot. (The carcass gets used for stock the next week.) I usually throw in some combination of cumin, Tabasco, cilantro, garlic, and maybe a few bits of onion if it’s left over from something else. This is a great recipe to always have the ingredients on hand and customize it to whomever you’re cooking for. Just always remember the avocado and tortilla chips! Thank you for an amazing base recipe. The boyfriend always gives it a double thumbs up, and is always disappointed when he orders this at restaurants. He always says “It’s not as good as yours.”

T's Sweet Potato Fries

Wow! Great recipe! I made this as recipe directed, though cut it in half. Love the microwave to make it quicker. I was kind of hesitant about the lemon pepper seasoning, but I was serving with fish and it was a perfect match! This recipe will get used often and with lots of seasoning experimenting with seasonings! Thanks

Simple Turkey Chili

This is a great! I followed the recipe, but aded a can of chili beans since I had those on hand and added a few healthy shakes of crushed red pepper since I like things spicy. I also let this simmer for several hours before serving. It was amazing, there was plenty leftover for lunches, and it reheated in the microwave very well. The boyfriend voted it into regular rotation. Next time I might try this in a slow cooker like some of the other reviewers and double it to freeze for quick dinners later. Thanks!

Turkey-Stuffed Peppers

This recipe was "fine" there was nothing particularly outstanding or lousy about it. I made this according to the directions, adding about a 1/2 tablespoon of crushed red peppers for some spice. It was bland and boring, and noone ate all of it. I appreciate a twist on the stuffed peppers and the healthy turkey option. I think this would be a good choice for kids maybe as it was fun to eat and makes quite a bit.
