Crunchy Eggplant Parmesan
This is an excellent tasty recipe! The way to keep the crunch is to put the prepared eggplant on a baking sheet and just top each slice with a little sauce and the cheese, instead of layering it and smothering it in sauce and cheese. That way the bottom stays crunchy. Try slicing it 1/2 thick instead of 1/4 inch and baking the slices a little longer before putting on the sauce so it cooks all the way through. I put thinly sliced mozzarella cheese on top of the sauce and a nice sprinkling of Asiago cheese to give it more flavor an a little kick. Oh so good! Thanks for posting.

Cowboy Cookies II
This is my favorite oatmeal cookie recipe. We like it best by using the original recipe but omitting the chocolate chips and adding 2 cups of raisins, 1 cup of chopped dried cherries, 1/2 cup coconut and 1 teaspoon cinnamon. Very chewy cookie that is just perfect.

Oatmeal Raisin Cookies IV
I plan to make this my standing recipe for oatmeal raisin cookies. I tweaked the recipe just a little and the cookies were outstanding....doubled the amount of raisins and soaked them in rum for a couple hours, discarded the juice before adding to dough. I mixed in 4 large eggs after creaming butter and sugar which give the cookie that chewy texture. Also I found that adding 1/2 tsp. of salt and another teaspoon of cinnamon gave the cookies more flavor and used 1/2 regular oats and 1/2 quick cooking oats. Adding 1/2 cup coconut made the cookies even more chewy and moist. My husband LOVED this recipe. Thank you so much for posting. Would rate 10 stars if I could.
