Creamy Chicken and Wild Rice Soup

I have a gluten intolerant person in the house, so I modified it a tiny bit. Basically, I eliminated the roux. I started with the 4 cups of broth, and 1 cup of water. I had raw tenderloins, so cut those up and boiled them in the broth, along with celery, carrot and onion. I then added the rice mix (gf kind) and cooked that. While that was cooking to get the rice and veggies tender, I added a can of evaporated milk and about 1 1/2 Tablespoons of cornstarch, blended together as the thickener. I also threw in a couple handfuls of frozen corn. It turned out great. I know this is not the exact recipe as written, but it's nice to know that it can be made gf and still be acceptable to a family having dinner together.

Peanut Banana Muffins

Just made these to surprise my son and husband as they returned home from a scout trip. They were great. We all thought that the addition of a little baking cocoa, along with the flour (maybe 1/4 c) or a mixture of both peanut butter and chocolate chips would be good too.

Asian Pork Tenderloin

Tried this for four people with pork tenderloin chops, the boneless oval ones. It was fabulous. I also took the marinade, after it came from the oven, and put it in a saucepan, added some honey and brown sugar and two packets of Real Orange. Boiled it, and served across bias sliced pork, and rice. We had Sweet and Spicy Green Beans (from this site) with it. EXCELLENT!

Honey Mustard Grilled Chicken

My family loved this. It was a quick, easy way to make our chicken breast more flavorful, while keeping it moist on the grill. Sure there are other recipes that will do that, but this one is quick. No marinading for hours, no pre-planning. More than likely you already have all the ingredients. I did taste the sauce and thought it could use a little more zing for the sweetness, so stirred in a small amount of horseradish sauce. About 1/2 tsp for the original recipe.It worked really well. Great recipe! Thanks for posting it. Will make again very soon!!! YUMMMM!

Pumpkin Parfait

I fed this to my family tonight. It was wonderful! We thoroughly enjoyed it. I did end up using a 5 oz box of sugar-free vanilla pudding and an entire 12 oz can of evaporated milk, along with 4 oz of water. My mother in law is celiac and diabetic so this was fantastic. We will make frequently. Delicious. Thanks so much for the awesome recipe!

Pork Tamale Pie

I really liked this recipe. It was easy enough to modify for my family. I wouldn't really say I changed it much. My pork was alredy previously roasted, I had to use frozen corn, and I plopped a little minced garlic in with the pork and chicken broth to simmer. Also used taco seasoning. I also added a small can of chopped green chilies when I mixed the pork and corn meal mixtues together. Also, I didn't use the juice from simmering the pork. I just put the pork in the mixture. Good recipe. my whole family loved it.

Wow! That's a fantastic cake! The Boy Scouts gobbled it up. I quadrupled the recipe and then dusted lighty with powdered sugar. Mmmmmmm.

Chicken Pot Pie IX

Wow, what a delicious recipe! My family went nuts for this! Next time I will 2x it. I used cubes of leftover turkey, and a some frozen mixed veggies. I also boiled the veggies in chicken broth. Added onion powder, garlic, a dash of poulty seasoning, and a couple of peeled diced russets. Make the recipe for gravy as written, then taste and adjust seasonings to your liking. This is great as written, I just thought it needed a little more oomph. YUM! Thanks for the terrific recipe!

Mom's Mexican Cornbread

We really liked this recipe. I gave it four stars because I can see how it could be bland as written. I have to say though, it's a great starting place. I have a plan for easy dinners where I cook in bulk and then use as needed. I usually make a huge package of hamburger all as taco meat, with a diced onion and taco seasoning. This was a great way to use up a pound of that from the freezer. I just defrosted it and then followed the recipe as written, with the exception of using a pre-shredded mexican cheese blend, and evaporated milk instead. I also used two eggs, because I used whole can of milk, about 1 1/2 cups, and then threw in about an extra 1/2 cup of cornmeal as well.It was delicious and my whole family enjoyed it. We have a gluten intolerant family member as well, and they can eat it too! Thanks for the yummy mexican cornbread recipe. Mucho Bueno!

No Bake Peanut Butter Pie

My husband and I threw this together when I got home from work. What a fun and easy couple creation. Anyway, we pretty much followed the recipe until my pie shell shattered! So then we heated up some hot fudge topping and put that in the bottom of some individual serving cups. Then followed with the filling and sprinkled with the graham cracker crumbs from the crust. It's in the fridge now, but the tastes we snuck were pretty darn good. YUM! Thanks for the great recipe!

Brown Sugar Chops

Wow, these chops were great. Tonight was a busy evening with people eating dinner at various hours. I put these together quickly and threw them in the oven. With all the busyness, I even forgot to put the foil on until probably 45 mins into the cooking! They got flipped and slightly basted a couple of times, and turned out fantastic. My kids loved them, my husband loved them, and even my ultra-picky food allergy ridden in-laws gobbled them up! Will make again and again! Thanks for the great recipe, Jodi.

Tater Tot Taco Salad

Yummmmy! Enough like the basic tacos that I knew my family would enjoy it, but just enough different to make it fun. I know that we all ate more of the lettuce and veggies than we would if we had just had tacos. Thanks for the great spin on an old favorite.

Potato Chips

Oh my gosh, these are some really good and easy snacks! We tried this recipe as a family project. My husband cut the potatoes on the mandoline, and our kids arranged them on the parchment lined stoneware medium bar pan from Pampered Chef. We sprayed the parchment with Pam, and lightly sprinkled it with salt. After just a few minutes in the microwave, we were all very happy. YUM. Thaks for the recipe!

Bar Cookies from Cake Mix

We loved this recipe. I have the Pampered Chef large bar pan and this fits it perfectly. I have made this twice. Once with Dark Chocolate cake mix, adding chopped almonds and heath bar bits instead of the walnuts, and once using a regular chocolate cake mix, with 1tsp of mint extract added with the egg and water. I also omitted the walnuts that time. I used parchment paper with the mint batch and nothing stuck. The previous time, I brushed my stoneware with just a touch of oil, because chocolate chips can cause sticking. This is an awesome recipe. Thanks for sharing!

Peppermint Brittle

Wow, this stuff is pretty good. I used 1 bag of Nestle white chocolate chips,and 1 bag of Premier Chocolatier white morsels, some crushed up starlight mints, and a few full size candy canes crushed up too. My family loved this. They do want me to do a layer of dark chocolate to spread this on top of. Good stuff though.
