Mushroom and Swiss Chicken

Reviewed: Jan. 10, 2010
Very good. Only reason 4 stars is because you have to marinate the chicken with oil vinegar and garlic. I also added some mrs.dash. Then added musrooms to bag when i put chicken in the oven with another tbs oil and vinegar. After adding mushrooms cooked for 20 minutes. Add cheese after that put back in oven and turn oven off 5-10 minutes later cheese will be melted. Thanks for the post

Corn Casserole III

Reviewed: Jan. 8, 2010
My mom loves corn pudding and this is really easy to make. Dont be worried it is very runny going in the oven it thickens considerably when it bakes. Not as good as traditional granny recipes but quicker and can be fairly low in fat with modifications.

Ham Broccoli Braid

Reviewed: Jan. 8, 2010
Very good idea and base recipe. I used 1 cup frozen brocolli, 2 cups leftover ham, 2 mushroom caps diced, 3 green onions diced, and a clove of garlic crushed. Microwaved the broc for 2 minutes to defrost then sauteed all above ingredients in olive oil with a dash of mrs dash. Then I mixed 2 tbs stone ground sweet and spicy mustard, 1 tbs regular yellow mustard, a squeeze of lemon juice, tsp of relish (from a similar recipe on the site) and heaping tbs each of sour cream and a mayo. Mixed it all up with a generous cup of baby swiss. The braid part was a little tricky, i had two much dough and think 1.5 cans would be perfect, may even try to use one can next time or make 2 with 3 cans. Brushed with butter before baking. Looked sloppy going in oven but came out pretty and delicious.Very good use of christmas leftovers and my bf loved it. Can't wait to try other fillings especially taco combo. MMMMMmmmm Thanks for the post!

Delicious Ham and Potato Soup

Reviewed: Jan. 6, 2010
Awesome soup made this a couple of times and it truly is worth 5 stars. I used a ham bone with mean attached added 4.5 cups water 2 bullion cubes and a package of frozen onion/celery/green pepper mix and mrs dash to taste. Brought all that up to boil then simmered about an hour. Shreeded ham off the bone and added it back to broth. Added 5 cups red potatoes diced. Then made the roux adding some cubed baby swiss after thickening. A good trick for new cooks is after the roux bubbles and thickens remove from heat and add 2 cups of broth/ stock wisk and return veggie ham pot , this reduces lumps. Great for these record low temps. Thanks for a family favorite!

Marinated Grilled Shrimp

Reviewed: Jul. 30, 2009
The best shrimp I have ever eaten. Made this recipe twice and it is fabulous. Used up some fresh basil from the garden too. The second time I made it I hade no tomato sauce, so i used a few tablesspoons of cocktail sauce and ketchup as a substitute. Also we add a couple dashed of hot sauce in addition to red pepper flakes. If you are a scampi fan this will knock your socks off!
