Alfredo Sauce

I've been making this sauce for 5+ yrs because my daughter is such a pasta lover. I usually use the same amount of parmesan as the butter. You don't really need to use fresh ingredients as well. Pre-grated Parma and dried parsley is good enough.

Red Skinned Potato Salad

Best potato salad ever! Dead serious! What I usually do: 3 lrg potatoes, red onion, 5-6 strips of bacon or bacon bits, 2 stalk celery, about 1 1/4 cup mayo mixed with yolk until smooth, dashes of cumin. BAM!

Lemon Garlic Tilapia

Quick and easy but lacking some flavor. Next time I think I will add lemon pepper, add lots of sliced garlic & butter. Drizzle with lemon juice afterwards.

Barbie's Tuna Salad

I have used this recipe for years but adjusted the ingredients like omitting the sweet relish and dill. We use albacore tuna and carefully mix it but leave some chunky. We also like to add celery to it and salt and pepper.

Mexican Wedding Cookies

Great cookies! Used confectioners sugar instead of regular sugar to give this a crumbly shortbread like texture. We prefer pecans better than almonds for this type of cookies. With such few ingredients, you must use a quality grade butter such as AA or A. This is really good but I only gave it a four because it wasn't quite like the one I tasted in San Diego, CA.

Sopapilla Cheesecake

Oh lord have mercy!!! This was amazingly good. It taste a little like churros but better. The only change I made was half the butter/sugar/cinnamon toppings. As other reviewers had suggested, mix those last 3 ingredients together but make sure mix cinnamon & sugar together before adding it to the butter (I like the butter to be half melted).

Crustless Spinach Quiche

I was in search for a spinach dish because I had a bunch of fresh spinach from my mother. I was so glad I found this recipe. My family loved it! Since I didn't have canned spinach, I had wilted them in the microwave (in a large bowl fill it with spinach;1/4 cup of water;cover it well with a plate & make sure it's not resting on the spinach; microwave for 3-4 minutes;transfer to colander;press w/ a spatula to release excess liquid). I also used half parmesan and mozzarella because that's what I had and still turned out fabulous!!

Chicken Enchiladas II

This is a great alternative. I'm not really a fan of the red sauce that's why I never attempted to make enchiladas. I didn't use green chile because my daughter wouldn't like it and I think next time I will use fresh garlic and italian ground turkey and corn tortillas. We thought that the chicken was a little bland.

Fish Tacos

Usher song: "I mean like, ooh myy gosh I’m soo in love...". Anyway, I wasn't able to go to S.D. this year so I made this for our anniversary lunch and the taste was unexpectedly good. It was a little bit spicy for me but my hubby loved it alot and went to his quiet zone. I made minor adjustments and used tilapia instead, salt & peppered fish before flouring it, omitted capers, and used slaw mix. After experimenting with beer batters, I have found that Bud Light works the best. The battered fish also tasted wonderful itself. Thanks Breese823!

Deep Dish Alfredo Pizza

Corn Dog Muffins

This was good way to use hot dogs when I have 4 left and no buns! I halved the recipe except the brown sugar and also chopped the hotdogs. Next time, I'm going to try using the cornbread muffin from here and just add hotdogs.
