Hash Brown Quiche

A nice base! My bottom hash were a bit mushy even when I baked them 5 minutes longer. I would have liked it crispier and golden brown. Since I had my pancake skillet out already, I gently removed the quiche (cooled enough to handle) and transferred it to the skillet to brown the bottoms. But next time use less butter or bake it way longer. For the toppings, we used bacon, half gruyere half cheddar cheese, and green onions....yum!

Paalu Mithai (Milk Sweet)

Very interesting indeed! I love sweet but it wasn't the right balance of sweetness and found that the cardamom to be very overpowering. I am the only one in the house can tolerate various spices but not for everyone else. Oh, I didn't have ghee so I made my own using Alton Brown's recipe.

Italian Bread Using a Bread Machine

Amazing bread! I decided to make this because someone had posted in the 'buzz' that hers turned out dense and seeked for help. After reading a few reviews, I used half bread flour half all-purpose flour and cut the salt down to 1 teaspoon. I had used the bread machine for the kneading part only (20min) and rised the dough in a lightly oiled bowl, covered with a damp towel inside the oven with lights on. Since the house was cold, I turned on the warm setting (boost the heat) until it starts to warm up but not too warm. Then turned it off. It doubled in 30 minutes. Thought that was awesome because normally I let dough rise way longer than that. After shaping it, I placed in a baking pan which I smeared with teensy bit of oil, dusted cornmeal, and covered with a damp towel then placed it in the oven. The bread was soo soft with slightly chewy crust just like the convenient store.

Caesar Salad Supreme

Chipotle Thyme Corn

Wow, this stuff is good and very easy as well! We're always looking for different ways to cook corn. I had used the adobo sauce instead because I didn't realize that I was supposed to finely chop the chilies but it it still turned out fine. Also, my family thought that the thyme was a bit much, so next time, I will tone it down. This is a keeper! Thank you, NYRudy

Pineapple Upside-Down Cake VII

Very good and super easy! I halved the recipe and used a remekin. I should've used the pineapple juice and/or pineapple cake mix because you can definetly taste a boxed white cake. It's all good though.

Strawberry Tapioca

I think this is best when strawberries are in season...getting that natural sweetness from it. I made an ice drink from this by pre-cooking small colored pearl tapioca (asian store) then cooled; slightly crushed ice first in the blender then crushed with the strawberries leaving some bits and pieces, then mixed in the cooled tapioca and added a bit of water. I had to add splenda also because my strawberries wasn't ripe enough.

Ronaldo's Beef Carnitas

Another great carnitas recipe here in AR...hard to choose! I was afraid to use the chile peppers because my daughter hates spicy food but i went for it anyways and it wasn't spicy at all. The taste overall is too safe for me, so definetly double the ingredients.

Orange Pecan French Toast

These were delicious! Although, I thought it was a wee bit sweet, so maybe next time, I will use light brown sugar. Of course, my kiddo didn't mind the sweetness but would like the orange taste to shine. I had halved the recipe and used a remekin. I simply cut round breads from a drinking glass.

Rich and Creamy Potatoes Au Gratin

Should be called dreamy potatoes :). My husband thought this was better and different from the traditional gratin/scalloped potatoes. I love gruyere cheese so much, I'm going to add a bit more of it next time.

Eat Michigan Salad

So fab! I had altered down the recipe and used my gizmo salad mixer (xmas gift) because I knew the blender won't work for that small amount. The only changes I made was to use rice wine vinegar, all I had, craisins pomegranate, and used canola oil.

Just what I needed! Light honey taste with a hint of sweetness (used splenda). I bet it would be good with flavored honey such as rasberry honey my daughter loves from our local honey store.

Beghrir (Moroccan Pancakes)

I'm sorry, this didn't turn out so great. I love the idea of the holey tops but couldn't get passed texture. I only made 2 just to try, then made the rest as crepes to use up the batter because I don't want it to go to waste. I'm sure there's potential in this recipe with minor tweaks.

Potato Dumplings

Disappointed! Had leftover potatoes to use and stumbled upon this recipe my husbands granny used to make. The only change I made was to insert a crouton in the middle. Its very easy to make but found this stuff too eggy and not the right texture.

Maui Girl's Mango Pie

Lovely pie and easy to put together! Make sure to taste your mangoes before adjustig the sugar. I used champagne mangoes (all I had) and omitted the lemon just because I felt it didn't need any. I made this into a single serving (1 cup mangoes) for my daughter using a remekin and made French Pastry Pie Crust (AR). I think this would be a perfect summer pie, cooled, and have it with an ice cream.

Shish Tawook Grilled Chicken

This stuff is soo good! I haven't had a good grilled chicken breast in awhile. I made as is (so unusual of me) and it came out so moist and flavorful. I love the lemon taste. The only change I would make is to cube them smaller. My child doesn't like too much of the lemon taste so add more tomato paste. Thank you Noor!
