Slow Cooker Chicken Stroganoff

This recipe was really simple, and delicious! I served it over egg noodles, and it was great. I think the next time I make it, I will add a cup of sour cream, just to give it a more traditional stroganoff tangy-ness. I also added a bit more margerine, 1/4 cup, rather than 1/8. The packet of Italian dressing mix really added flavor. I will definitely make this one again!

Libby's® Pumpkin Cranberry Bread

This was an easy recipe, and it was delicious! Took it to the office and everyone raved! I used Libby's Pumpkin Pie Mix, rather than the plain pumpkin puree, but it turned out fantastic! I will be making this bread a lot from here on!

Pumpkin Swirl Bread

This recipe turned out great for me! I ended up using Libby's Pumpkin Pie Mix, with the added spices, rather than just the pumpkin puree, but I thought it was great!. It was just delicious. The only thing I didn't like was that I had to use 3 seperate bowls! Lots of clean up...but worth it in the end!

Taco Pie

I made this over the weekend, but with a few variations. I used ground turkey instead of ground beef. I also used a can of hot rotel (drained) and a can of ranch style beans (drained of excess sauce). It turned out delicious and because of the rotel, pretty spicy, but thats the way we like it. The next time I won't add the sour cream before baking, I'll just wait and add it as a topper. I will probably also use a bit more cheese because we like things cheesy. This is an easy recipe and makes a nice meal that is great on a cold day!

Hot Crab Dip

I actually liked this recipe, but next time I make it I will alter a bit. Less mayo and more cream cheese, since I found it to be a bit to mayonnaise-y! I also didn't add onion, since my boyfriend doesn't like, and I also skipped the lemon juice.

Vanilla Glaze

This is an easy glaze recipe, and would complement many types of sweet bread, cakes and cookies! I used it to glaze a banana bread and everyone in my office loved it!

Nacho Chicken Casserole

I thought this turned out pretty well. I did make a few changes however. I used 2 5 oz chicken breasts, so a bit more chicken than the recipe called for. I also used 1 can of hot Rotel tomatoes in place of the green chilis and jalepenos just because of taste preference. I also used more cheese, and still thought it could be cheesier. I think the next time I make this I will not cube the chicken, but rather just keep the breasts whole and placed into the casserole, and then serve with mexican rice and refried beans. Another thought that I see here is to serve it wrapped in tortillas, or over tortilla chips like nachos which I may also try. It was a good, easy recipe with lots of variations that can be done.

Easy Scalloped Potatoes

I like this dish once it was done, but I will alter it from now on. The main thing is to boil the potatoes first because it took forever for them to cook thoroughly. I'm in a high altitude area, so expect that, but it literally took 2 hours and because I wasn't expecting it to take quite that long we ended up eating our steak with no side dish! Also, I will use the suggestion to use a larger casserole dish to spread it out, rather than a deeper dish. I think I will also use a bit more cheese, as it wasn't as cheesy as I like my scalloped potatoes.

No-Fuss Pumpkin Cake

I made this cake over the weekend and thought it turned out good. I have been reading some of the other reviews and I think I will try to change it up a bit the next time I make it just for fun. It is a moist cake, and not overly sweet which is nice. I did have to cook a bit longer because I'm in a high altitude area, but it was delicious!
