Slow-Cooker Chicken Tortilla Soup

I make this all the time.instead of frozen corn use fresh if possible or if you want add hominy instead for a more authentic result. instead of water add beef broth to your base. we serve ours over plenty of cheese and fried crispy homemade corn tortilla strips. yum yum. never have left overs!

Shrimp and Crab Casserole

I tried real hard to make this more tasty by cooking the shrimp in coconut milk, adding bell pepper, leeks, garlic and read all the reviews and adjusted the mayo, added cajun spice--to no avail. sorry folks this is simply sos-and looks like you know what...maybe sherry would have been the ticket. not going to spend the money on crab again for that.

Slow Cooker Sausage with Sauce

I made this today and I was not too impressed. great idea if you have your own sauce I think. jar sauce does not cut it ( no matter who makes it ) to me. Also should have used my tried and true sausage instead of whole Foods brand. no bueno. I will use the slow cooker idea and will use it again when I have my fav sausage on hand.

Reuben Dip

I made this for our New Year's eve party last night for friends that enjoy a good Reuben sandwich like I do. They really loved it. I toasted cocktail rye squares with butter that I added season salt to and then put in my toaster oven. It was the right accompaniment.This recipe is a bit too greasy for me but I will make it again i think-but add horseradish like one of the other recipes to give it more zing.

World's Best Lasagna

I use agave nectar in my sauce to taste,or honey and a grated carrot from farmers market if possible, sometimes I add that packaged already cubed butternut squash from "Melissa's" brand, or fresh peas or hominy or fresh corn. Trader Joe's has frozen chopped basil and garlic in cubes as well,I also add ground veal/lamb or frozen veal stock or any other stock that looks good. I always add wine for sure.Use one you would drink not cheap stuff, I prefer a cabernet. Another cheese option for cheese lovers to add is the mexican mild, slightly sweet "ranchero" ( like ricotta)or "cojito" that is way firmer and saltier (like parmesean). There is no end to the possibilites for cheese or protein or veggies you can add to your sauce! I saw this euro recipe online that calls for bechamel sauce to add to the sauce layer--I may try it! Oh yeah try using sliced prepared polenta instead of lasagne noodles
