Savory Roasted Root Vegetables

Very simple to make, and I love how it makes use of those pesky beet greens! I bought these beets without the greens because I was tired of throwing them away, but next time I'll keep them on just for this dish! The addition of chickpeas is great, I would even add more if you're a fan. I didn't have wine, so I just used water with a small splash of apple cider vinegar. Different herbs would also be great for this, like sage or rosemary.

Butternut and Apple Harvest Soup

Quite delicious, even without the cream. The amount of squash called for didn't seem like enough, but I trusted the recipe and it was fine. The wine I used was too sweet I think, so make sure it really is dry if you use it, which I don't think you need to, really. Definitely a fall hit.

Tasty Lentil Tacos

I'm vegan, so I just made the lentil part and added olives, lettuce, salsa, tomatoes, and onions. Doesn't even need cheese to be a great taco! I never realized what a great meat substitute lentils can be!

Applesauce-Oat Muffins

I burned these a little bit, but I imagine they'd be great if I hadn't (start checking on them at about 15 minutes so the same doesn't happen to you). I added a full tsp of cinnamon to the batter mix as well as the topping. The topping was a bit loose, so I'd recommend pushing it into the batter a bit when you add it so that it doesn't fall all over the place when you're taking out the muffins. Don't use muffin papers, they'll stick like crazy.

Good Old Fashioned Pancakes

These are THE BEST pancakes I've ever made. They rise a ton, so are gorgeously fluffy, and melt in your mouth. I even adjusted them to be vegan (1 tbsp corn starch+2 tbsp applesauce per egg, and milk substitute), and they still turned out amazing.

Fluffy Whole Wheat Biscuits

Pretty good, very easy. I agree that the dough is a too sticky if you add all the milk (I ended up just ripping off sections to bake as the dough was too sticky to roll out well). These are very quick though, and fairly light.

Morning Glory Muffins II

My version: (vegan!) 1/2 c whole wheat flour+1 1/2 c all purpose flour 3/4 c sugar 1 1/2 tsp baking soda 2 tsp cinnamon 1/2 tsp salt 1 c grated carrots 3/4 c grated apples 3/4 c coconut 3 Tbsp corn starch 5/8 c applesauce 1/4 c canola oil 1/2 tsp vanilla *Took much less time to bake, only like 12 minutes. Also, only yields about 12 regular sized muffins. These are wonderful though, not too sweet and very hearty.

Jo's Rosemary Bread

To make this by hand, I first let the yeast activate in warm water (I used less than a cup, closer to 2/3 c.) I would recommend putting in the spices as you're mixing, before you knead, because the dough is fairly dense and it's hard to get an even distribution if you try to knead them in. After letting it rise twice, I baked it at 375 for about 35 min. I used fresh rosemary, and upped the amount of all the spices, because I like my breads to be very flavorful. It made a wonderful bread, not too crusty or moist.

Eggless Chocolate Cake II

I substituted the baking soda for baking powder because it didn't make sense to me to use soda, and the cake turned out pretty dense, so next time I'll either try the soda or add more powder. It tasted very good though, I made it with this Pudding Iicing from this site, which was very good

Pudding Icing

Wonderful, this really has the consistency of pudding. I used semi-sweet chocolate chips and added less sugar. I didn't have any problems with the thickening, but I used medium heat instead of low because it was taking forever to boil. If you do that just make sure you stir constantly so it doesn't burn. Also... this would make excellent vegan pudding for anyone interested :)

Vegan Davy Crockett Bars

I halved this and made it as cookies, with a few changes as follows: (* indicates a modification) 1 c. flour *3/4 c. vegan sugar 1/2 tsp. salt 1/2 tsp baking powder 1/2 tsp. baking soda 1 c. oats 1/2 c. vegan chocolate chips 1/2 tsp. vanilla *1/2 c. applesauce *2 TBSP. vegetable oil *2 TBSP. rice/soy milk. They came out a little cakey, but still pretty good cookies for no egg.
