Lighter Mexican Meatloaf

Wonderful recipe!!! I did not change the recipe but I used better ingredients. I used Cuban style black beans from Trader Joe's. I used frozen fire roasted corn also from TJs. I used fresh Pico de Gallo from Fresh and Easy for the salsa and panko breadcrumbs.Used the whole can of green chiles-why waste them? Made two meatloaves and it would be easy to freeze one. Will make this again and again. Thanks!

Sausage and Sauerkraut

I made this today and was very pleased. I never tried polish food before. This came out very well and was not greasy. Everyone loved it and there was nothing leftover. I only added more caraway--other than that I didn't change a thing. Also made pierogies. Will definitely make again!

White Bean Chicken Chili

I love this recipe and am now making it once a week! However, I find that it is too soupy for my taste as written so I omit the chicken broth. I have used fire roasted salsa verde from Fresh and Easy or Trader Joe's and also use fresh Pico de Gallo and Rotel tomatoes with habernaros for extra flavor to make it a five star chili!!

Eggplant Supper Soup

This recipe is a winner !! Delicious and low cal to boot!! I added mushrooms and zucchini and used Allspice instead of nutmeg. I 've made it 3 times in the last 2 weeks!!

Zucchini Casserole III

I did not change the recipe but one 16 oz container of cottage cheese was not enough, so I added extra. I did sprinkle a little Italian seasoning over the cheese layer, otherwise I was true to the recipe. My Dad and I ate the whole thing! He said it was good enough to serve in a restaurant! I'm making it again tomorrow. Thanks!
