Italian Creme Layer Cake

Reviewed: Jul. 1, 2012
After reading almost all of the reviewer's suggestions, I decided to dive right in and make this for my brother's birthday. I followed the suggestions for using parchment paper, but didn't for adding the chopped nuts to the cake. He loves pecans. It did make it difficult to cut without making a big mess. I also added a little coconut to the icing along with some more chopped pecans. His review was that it is a keeper recipe, an excellent cake and wonderful icing! BTW, he knew without asking if it was a cake made by scratch! It was that good. The rest of the family wasn't able to try the cake, so now I'm committed to a promise of making another one soon. I think I will!

Juicy Peach Crisp

Reviewed: Jul. 1, 2012
I doubled this recipe and used the suggestions to lessen the sugar and butter, half the flour and use 1/2 c. oats...it was wonderful. An excellent use of some really ripe peaches!

Peach Cobbler

Reviewed: Jul. 1, 2012
With the exception of using fresh peaches, I followed the recipe exactly. I did not like the doughy bottom left after it baked, too gummy for my taste. Flavor was awesome, thus the three stars. If I make this again (big "if"), I would put it a longer dish, not the Corning Ware one I used this time.

Flea Terminator Dog Treats

Reviewed: Jan. 19, 2012
Tiger, Buddy, and Hoover loved these. I hope they work with fleas later. It made a lot of little bone-shaped cut outs. They are still in the fridge in mid January and holding up well.

Mandarin Orange Cake I

Reviewed: Aug. 18, 2011
I followed the recipe exactly as written. It was moist and delish! I think I will follow a reviewer's suggestion and use applesauce instead of all that oil next time. I don't think it will take away from the flavor.

Blueberry Turnovers

Reviewed: Jul. 21, 2011
The turnovers were very sweet. I think I will reduce the amount of powdered sugar the next time I try these. I liked the ideas the reviewers had on using other fruits too. Some reviewers suggested using canned pie filling when fruits aren't so plentiful. Good idea.

Japanese-Style Sesame Green Beans

Reviewed: Jul. 17, 2011
These green beans were so tasty! My family's enjoyed these several times. I've followed the reviewers's additions/advice and changed accordingly. No matter what I've done, it all tastes great! I've served these mostly with chicken and once with steaks. I haven't served them yet with Asian foods! No one cares! They all love them and ask for them over and over again! Great recipe!

Artichoke Chicken

Reviewed: Jul. 17, 2011
Very moist, tender chicken. I had only a little regular mayo left in the jar, so I topped it off with the new mayo made with olive oil. I don't know if that made a difference or not, but the chicken got raves from my family.

Lemon Coconut Squares

Reviewed: Jul. 17, 2011
Since this was the first time I'd made these squares, I decided to follow the recipe just as written. Some things I'll probably change about these bars the next time I make them will be to add a little lemon zest, ( I love the tartness!), wait till they are almost done to add the coconut, ( or even toast the coconut beforehand), and probably bake them a little bit longer. My oven may not bake as hot as some others, and for the most part, most of the bars were just fine. I think that the entire pan should have been a little firmer than they were.

Cloverleaf Rolls

Reviewed: Jul. 17, 2011
I followed this recipe exactly as written. I wish that I had read more reviews first. I agree with one reviewer who mentioned adding more salt to the dough. I also added the entire 5 1/2 cups of flour, plus some and it still felt sticky. Taste was good, texture was heavy, and firmer than I thought it should have been. Maybe that had something to do with the extra flour I'd added.

Cheese and Broccoli Chicken Soup

Reviewed: Jan. 11, 2011
This is good soup. I would suggest waiting till the soup is put together before adding salt. My chicken must have been a little salty, so adding salt wasn't a good idea. I only had frozen broccoli and sharp cheddar cheese. the flavor was good and comforting during these really cold days of winter.

Easy Grilled Chicken Teriyaki

Reviewed: Dec. 25, 2010
This was so easy to make! Since it's the dead of winter, I used my George Foreman grill. That worked great! Flavor was good and very tasty! I will make this again.

Easy Toffee

Reviewed: Dec. 25, 2010
I made this for some of our Christmas treats. I think the next time I make this, I will break up the crackers in half instead of laying them in rows on the baking sheet. I also think I will use the idea of graham crackers instead. I didn't have room in my freezer, so I put it in the refrigerator instead and it worked just fine, I just kept them in there a little longer than 15 mins. They were a big it.

I didn't have any turkey sausage, so I used some grilled chicken breasts instead. The chili was a hit at my school's chili cookoff!

Peruvian Arroz con Pollo

Reviewed: Nov. 13, 2010
This is close to the recipe my mother-in-law makes. Her family is from Panama. One difference is that there is no wine in hers. Another is she uses no orange juice. I also add a bunch of flat-leafed parsley; chopped, capers, and use canned small peas.
