Charlotte's Tortellini Salad

Wow! What a great meal. I was looking for a cool, main dish, and filling salad for our hot summer nights, and this is the one!! I was very skeptical that my picky husband wouldn't like it. So I cut down the walnuts, didn't have green bell peppers, so I used celery, didn't have honey, so I used maple syrup. And he (and I) had two helpings each! Very filling, very delicious! Can't wait to make it for a pot luck type of outing, just to hear the rave reviews!

Slow Cooker Chicken Stroganoff

Very easy! Great for those soccer nights! Kids and husband loved it(the three toughest critics around!) A word of caution though, this is definately a rich meal. Very heavy. Not for the one watching their fat intake. Anything served w/ it must be light. (white rice, small salad, white wine)

Chicken Salad Al La Barbara

I loved it! However husband and kids did not. The mr. said it looks and tastes like I couldn't make up my mind to make fruit salad or chicken salad, and decided to combine the two. I would probably only make it again for a ladies luncheon. It's a tasty salad for hot nights!

Grilled Salmon I

mmm mmm good! This was so quick and easy. And the taste that it yields is scrumptous! Make sure you buy plenty of samon for this one, you'll eat it!! It's a keeper!! Thank you Tina for this one!

Basil Shrimp

I had my reservations at first. Only because I wasn't sure about the corse ground prepared mustard. All I had was Wal-mart brand squirt mustard! :-) And the basil I bought was not measured. So I winged it, hoping for the best, and WOW! this was so good. Will definately make it again. So delicious and impressive, I will serve for company. Probably as an appetizer though, because feeding shrimp to this shrimp loving family got costly. Not to mention having to count out all the pieces to make sure everyone got their fair share! :-)

Texas Caviar I

I made this in addition to my "famous" salsa, and everyone preferred this!! Including me! I added a whole onion, a can of diced jalepenos, and no cilantro. I couldn't wait to try it, so marinating it for an hour didn't happen. In my opinion, it didn't need it. It was pretty much gone in an hour anyway! Very good. Will be a staple at all bar-b-ques from now on!

Baked Dijon Salmon

With so many great reviews, how could it not be good. But.... it was just mediocre. Love mustard, love honey, love basically every ingredient in the recipe, but the flavors just didn't blend well. I probably wont make again, but if I did, I would use less dijon and more pecans. Dijon was overpowering and couldn't even taste the pecans. Thanks for the recipe though

Asparagus Appetizers

Yummy! Can't wait to make again. Next time I will spread the blue cheese/cream cheese on thick! We could hardly taste it. But that's only because I put a very thin layer on. I was worried it would be too overbaring. It's not. Also, I would brush on the melted butter. The bread soked it up too much.

Tasty Green Beans

This was sooooo good! My only regret is that I didn't have more beans! This "side dish" took the crown for the whole dinner, even over pecan crusted salmon and rice pilaf. My kids and DH were bummed when it was all gone. Will definately make again, soon!

Paige's Feta Slaw

Awesome! I have never liked creamy slaw, but love raw cabbage. I've looked and looked for an alternative, and WHA-LA! here it is!! VERY quick to make. Made a few changes as per other users. Used 1/4 olive oil, rice wine vinegar and water, 1/2 tsp salt, 1 1/2 pepper (still very peppery w/ that amount, which I like. Reduce even more if you're not fond of pepper), and 4 oz of feta cheese (as that is what the store bought packages come in). Husband and kids loved it!! Gone in a day!! Thanks Paige! This will be a favorite for years to come!

Croutons

Gave it 5 stars because I know it will be good. My first try yeilded a 1 star because "I" messed it up. Used WAY too much garlic salt and parmesean cheese(which is salty by itself), and unsalted butter. Needless to say, it was so salty we couldn't eat it. My only recommendation is to watch the salt products because it doesn't take much. Next time I will try w/ unsalted butter, garlic powder, and parmesean cheese.

Taqueria Style Tacos - Carne Asada

OMGosh!!! This is wonderful! If you are looking for authentic tasting carne asada tacos, look no further! Followed recipe to the "T" and came out wonderful. Can't wait to make again. I might try Beef Round because flank is not cheap, and it tasted so good, we wanted more meat. Thank you for a terrific recipe!

Potato Salad With Bacon, Olives, and Radishes

Very easy to make. The only thing, was that the potatoes I got out of the 10 lb store bag were kind of small, so I didn't know how many of them equaled 5, so I winged it. The remainder of the ingredients were about the same. My husband and mother kept saying how good it was. She said it's not "soupy" like some potato salads. He asked "when can you make this again?". My kids didn't care for it much. They said it was too spicey. I tasted the radishes before I cut them up, and they were in fact, hot little ones. So I would try them first, then add or subtract according. We have company coming soon that is vegetarian, and I'm going to make this again, but just substitue the bacon for fake soy bacon. Us meat eaters wont even taste the difference. Thank you for an easy, and terrific Potato Salad!

Garlic-Lemon Double Stuffed Chicken

Awesome as is. I only had frozen breast filets, but still made it the same way only I used 4 toothpicks to seal each breast. They were pretty thick, so I had to increase the cooking time by about 10 more minutes. The whole family loved it. No left overs!

Sarge's EZ Pulled Pork BBQ

I've made this twice, and both times it's great! I put the meat on deli rolls w/ sliced onions, a side of beans and coleslaw. W/ the leftovers the next night, I add a package of taco seasoning to the meat, simmer for a little bit, and have burritos. Awesome recipe! Thank you!

Hot Fudge Sauce II

Chocolate is chocolate, right? Hence the 3 stars. But like another reviewer stated, this tasted more like eating melted semi sweet chocolate chips. I think I'll keep looking.

Frijoles a la Charra

Very authentic tasting. Husband and I loved it, kids didn't. They are more accustomed to canned refried beans. I soaked the beans overnight. At the end of the cooking time, I had to drain ALOT of water, so I'm thinking that the overnight soak was not neccesary. I think I'll try it w/out the soak next time. Also, for anyone like me who might be wondering, I did not mash the beans at all. No need. They turned out wonderful. As a side dish or inside of tortillas.

Apple Cake III

This was my 9yr old sons first recipe he made on his own. It is that easy. The taste was good. I think if I were to make it again, I'd reduce the brown sugar. It seemed too much. Best warm w/ vanilla ice cream.

Banana Margaritas

I had to try this one being an avid margarita drinker. However, you MUST like the taste of triple sec to like this drink, and unfortunatly, we dont. Also, my bananas weren't very ripe and could barely taste banana. I would suggest using very ripes ones, and minimal triple sec according to your tastes.
