Connie's Zucchini "Crab" Cakes

Excellent! My and my family's only complaint was there wasn't more. The recipe yielded 6 cakes for me. Next time, I'll double it. Also, hubby (mr. meat and potato only guy) wants to try these on a bun. A healthy alternative to hamburgers. I set shredded zucchini aside w/ sprinkled salt to release water, then I squeezed it out. Note - be careful about how much salt you use, as my cakes turned out a little salty due to the old bay already called for in recipe. And as others suggested, I did add an additional tsp of old bay. Also, I made a dipping sauce too. Anything will do. Dill dip, tarter, or good ol' ketchup. Great recipe! Thank you for submitting!

Catfish Gumbo

Everything looked and smelled soooo good until I put the catfish in. I just wasn't sure about "boiled" fish. I served it up and my kids wouldn't touch it even after convincing them that this is the same fish I fry w/ french fries. My husband and I tried it, and both agreed that shrimp would've been far better. We picked around the catfish.

Better Than Sex Cake I

I've made this twice. Once as exactely written w/ 2C chocolate, and once w/ 1c carmel and 1C chocolate as others have suggested. I probably wont make this again because it is sooooooooooooooo sweet!! We ate it none the less, but w/ huge quantities of milk. If you don't mind super sweet, than this is a perfect and easy cake to make for your family.

Bow Ties with Sausage, Tomatoes and Cream

Excellent! Even my pasta hating husband loved it! The only change I "had" to make because I didn't have all the ingredients was, I only had 1 cup of heavy cream, so I used an additional 1/4 of half and half and 1 tbls of sour cream. Made garlic bread and salad.

Garlic Chicken

The taste was good, however I had a little problem w/ mine. At 35 minutes, the breadcrumbs looked very dry. I quickly melted butter and pour over the chicken, which helped the dryness of the crumbs. I let it back an additional 8 minutes. BUT the chicken was too dry. I will make this again because of the ease of it. Although next time I will shake off as much as I can of the breadcrumbs.

Winter Fruit Salad

I live in an area that I cannot find kumquats, although I do have a tree that only produces in the early spring. I love kumbquats and quinoa so this is the perfect combo! Very refreshing! Next time (next year) I think I'll add purple onion to it.

T Bird's Beef Jerky

The taste is great! I used round steak, the thinnest I could find in the store, and it still was pretty thick for beef jerky. Next time I'm going to keep my eye out for london broil when it's marked down, and have the butcher slice it paper thin. Other than the thickness, the taste was great! It only lasted a day in my house.

Refried Beans Without the Refry

Finally! I've been searching and trying lots of refied beans recipes and yet they were all okay, this one is awesome! I highly recommend this one to people who have kids that might be used to the beans in the can because these taste very similar. Next time I might experiment w/ a little less salt, as it seemed pretty salty. But very edible non the less. Thank you for submitting a great recipe!

Banana Margaritas

I had to try this one being an avid margarita drinker. However, you MUST like the taste of triple sec to like this drink, and unfortunatly, we dont. Also, my bananas weren't very ripe and could barely taste banana. I would suggest using very ripes ones, and minimal triple sec according to your tastes.

Apple Cake III

This was my 9yr old sons first recipe he made on his own. It is that easy. The taste was good. I think if I were to make it again, I'd reduce the brown sugar. It seemed too much. Best warm w/ vanilla ice cream.

Frijoles a la Charra

Very authentic tasting. Husband and I loved it, kids didn't. They are more accustomed to canned refried beans. I soaked the beans overnight. At the end of the cooking time, I had to drain ALOT of water, so I'm thinking that the overnight soak was not neccesary. I think I'll try it w/out the soak next time. Also, for anyone like me who might be wondering, I did not mash the beans at all. No need. They turned out wonderful. As a side dish or inside of tortillas.

Chocolate is chocolate, right? Hence the 3 stars. But like another reviewer stated, this tasted more like eating melted semi sweet chocolate chips. I think I'll keep looking.

Sarge's EZ Pulled Pork BBQ

I've made this twice, and both times it's great! I put the meat on deli rolls w/ sliced onions, a side of beans and coleslaw. W/ the leftovers the next night, I add a package of taco seasoning to the meat, simmer for a little bit, and have burritos. Awesome recipe! Thank you!

Garlic-Lemon Double Stuffed Chicken

Awesome as is. I only had frozen breast filets, but still made it the same way only I used 4 toothpicks to seal each breast. They were pretty thick, so I had to increase the cooking time by about 10 more minutes. The whole family loved it. No left overs!

Potato Salad With Bacon, Olives, and Radishes

Very easy to make. The only thing, was that the potatoes I got out of the 10 lb store bag were kind of small, so I didn't know how many of them equaled 5, so I winged it. The remainder of the ingredients were about the same. My husband and mother kept saying how good it was. She said it's not "soupy" like some potato salads. He asked "when can you make this again?". My kids didn't care for it much. They said it was too spicey. I tasted the radishes before I cut them up, and they were in fact, hot little ones. So I would try them first, then add or subtract according. We have company coming soon that is vegetarian, and I'm going to make this again, but just substitue the bacon for fake soy bacon. Us meat eaters wont even taste the difference. Thank you for an easy, and terrific Potato Salad!

Taqueria Style Tacos - Carne Asada

OMGosh!!! This is wonderful! If you are looking for authentic tasting carne asada tacos, look no further! Followed recipe to the "T" and came out wonderful. Can't wait to make again. I might try Beef Round because flank is not cheap, and it tasted so good, we wanted more meat. Thank you for a terrific recipe!
